Raw is good with a little dressing.
Cooked (steamed) with a little butter. And I know this may sound sick but when I was a kid we would always put just like a 1/2 teaspoon of vinegar on our spinach before we ate it.

2 packages frozen chopped spinach
4 tablespoons butter
2 tablespoons all-purpose flour
2 tablespoons chopped onion
1/2 cup evaporated milk
1/2 cup spinach liquid
1 (6-ounce) roll jalapeno cheese, cut into small pieces
1 teaspoon Worcestershire sauce
1/2 teaspoon black pepper
3/4 teaspoon celery salt
3/4 teaspoon garlic salt
Ground red pepper
Salt
Cook spinach according to directions on package. Drain and reserve liquid. Melt butter in a saucepan over low heat. Add flour, stirring until blended and smooth, but not brown. Add onion and cook until soft but not brown. Add evaporated milk and reserved spinach liquid slowly, stirring constantly to avoid lumps. Cook until smooth and thick; continue stirring. Add the cheese, Worcestershire, black pepper, celery salt, garlic salt, red pepper, and salt, to taste. Stir until melted. Combine with cooked spinach. This may be served immediately or put into a casserole and topped with buttered bread crumbs. This flavor is improved if the latter is done and kept in the refrigerator overnight. This may also be frozen.

Buy some cannelloni tubes first and a good tomato and garlic sauce. For convenience sake.
Tear up fresh spinach leaves and put in to blender, add ricotta cheese, salt and pepper and blend until smooth.
Put the mix into a plastic bag and cut off one small corner.
Pipe the mixture into the cannelloni tubes, place filled tubes in a shallow baking dish, pour the sauce over the tubes and bake (180 - 200 degrees Celsius) until cannelloni is soft.
Approx 40 mins. Enjoy!

Creamed spinach is very good, I'm actually quite addicted to it!

INGREDIENTS
1 1/2 cups whole milk
4 (10 ounce) boxes boxes frozen chopped spinach, thawed and squeezed dry; reserve 1/2 cup liquid
3 large garlic cloves, minced
2 tablespoons butter
3 tablespoons all-purpose flour
1/2 cup grated Parmesan cheese
1/2 teaspoon ground nutmeg
Salt and ground black pepper

DIRECTIONS
Combine milk, spinach liquid and garlic in a 1-quart microwave-safe measuring cup or small bowl covered with a saucer, and microwave (or heat slowly in a medium saucepan) until very hot and steamy. Let stand for 5 to 10 minutes to soften garlic.

Melt butter in a Dutch oven over medium-high heat. Whisk in flour. Add hot milk mixture all at once, then whisk until smooth. Stir in spinach; cook until sauce is thick and bubbly and spinach is tender but still green, about 5 minutes. Stir in cheese, nutmeg, and a generous sprinkling of salt and pepper. Serve hot.

Make-ahead tip

After adding spinach to sauce the mixture can be turned onto a large rimmed baking sheet to cool quickly, then transferred to a covered container and refrigerated up to 2 days. Warm slowly over low heat. Stir in cheese and season with nutmeg and a generous sprinkling of salt and pepper. Serve hot.

Try sauteeing it with some garlic, olive oil, salt and crushed red pepper flakes. When it's good and wilted, hit it with a good portion of grated parm cheese.

Sausage is great with spinach as well (if you're cooking it - not eating it raw). My mom used to brown sausage and then mix it with cooked spinach and cooked potatoes. Salt, pepper, some hot pepper and cheese. Delicious! Also makes a great bread filling.

There are many ways....

You can eat it raw and make a strawberry salad (my boss made this the other day and I know for the dressing she mixed strawberry preserves in with something-it was good!) it had sliced strawberries and almonds on them.

You can fry up some garlic (lightly brown it) in olive oil then sautee the spiniach with it...mmm thats my number one favorite way to eat spinach! I love spinach!

Spinach is delicious if it's cooked right. You do not want a big pile of nasty, slimy spinach plopped on your plate, no one does - it's just gross that way but add it to a dish where it can cook into everything and it's hardly noticeable. Use fresh spinach in a salad and it's great! Saute it just 1, maybe 2 minutes and it's delicious! Try the following -

Chicken with Tomato and Spinach (Prep time-15 min)
1 1/2 cps diced chicken
1 large can of Italian seasoned diced tomatoes
4 Tbls tomato paste
1 cp mushrooms
3 cps loose baby spinach (about 1/2 of a bag)
1 1/2 cps cooked penne pasta (or whatever you prefer)
1 cp shredded mozzarella cheese
In a lrg pan over med heat combine the diced tomatoes and tomato paste. Mix well and add the spinach and mushrooms, stir occasionally until spinach is wilted. Gently fold in pasta, chicken and heat thru. Top with cheese and serve.

Italian Chicken Melt (alternate use of the above recipe)
6 slices of french bread
Garlic butter
2 cps of Chicken w/Tomatoes and Spinach
1 1/2 cp mozzarella cheese
Spread the garlic butter on the french bread and toast in the oven for 3-4 min at 400*. Spoon about 1/3 cp of the Chicken dish onto each slice. Top with 1/4 cp of so of cheese. Toast in the oven another 2-3 min till the cheese is melted.

Sautéed Spinach and Red Pepper (Prep time-10 min)
1 tablespoon olive oil
2 teaspoons butter
½ medium red bell pepper, seeded and cut into strips
8 med mushrooms, sliced
1 bag fresh rinsed baby spinach
1/2 teaspoon Mrs Dash, Garlic and Herb

In large skillet, heat olive oil and butter over medium heat. Add bell peppers, cook, stirring frequently, for about 2 minutes.
Add sliced mushrooms and sprinkle with Mrs. Dash. Cook, stirring frequently, for another 2 minutes.
Add rinsed (undried) spinach to the skillet and cook, stirring occasionally, for 1-2 minutes. The spinach should just get hot and barely begin to cook. Move immediately into a serving dish and serve.

Once you’ve stirred in the spinach, turning this gently with a pancake turner worked well. It should not get all slimy so you want to keep it from sitting on the bottom of the pan for very long.

I couldn't stand spinach when I was younger til I accidentally found the perfect secret. Add a good dash of nutmeg while cooking along with a dab of butter. Yummy!

I do this for the health benefits and because I have a hard time fitting in veggies. I toss a handful of fresh spinach in a blender and add about a cup of V8 juice. I know V8 has lots of sodium, but try this. It really gives the V8 juice a good flavor. I told my co-workers to try this and they love it too!

depends on if you want it cooked or not -

leafy ? throw it in a salad with some dressing

cooked ? fry a little bacon and drain - slice a few onions if you like them and sautee them in bacon grease or butter or olive oil
then throw the spinich in a pan on medium heat with olive oil and lightly toast or warm the leaves so theyre cookd a little but not soggy ( ewwww ) throw in the onions and bacon ( broken up like bits ) and use as a side dish -

if your really into trying new stuff - cooked potaotes just ilke you were making potaote salad add a little sugar ( three or four tablespoons ) and a tablespoon of vinegar when you are cooking and pour it on top of the hot potatoes similar to what norhterners call hot dandelions or hot lettuce - i personally love it to death - good luck
