For some reason I got chives and scallions mixed up in my brain and bought chives for a deviled egg recipe that called for green onions. I'm thinking chives may actually be better since they're smaller and the egg filling won't be as chunky, but should I change the amount I'm using? Do chives taste very different?

this is the best mistake you could have made for your deviled eggs.
Chives taste much finer then green onions. Your eggs will be a hit.

I actually think you might like the flavor of chives better. The taste of both are similar enough that it won't change the recipe all that much. While you're at it, have you ever used capers in a recipe for deviled eggs? Very yummy.

Yes you can substitute the are practically the same thing. Chive are smaller than green onions and have the same taste.

Feel free. They're just a little bigger but both have a mild onion taste.
