King Ranch Chicken

Ingredients
1 can Cream mushroom soup
1 can Cream chicken soup
1 Soup can milk
1 Small onion, chopped
1 4 oz. Can Ro-Tel
5 oz. Cooked chicken
10 Corn tortillas, cut into fourths
12 oz. Shredded cheddar cheese
Preparation
Mix together and heat the soups, milk, Ro-Tel, onion and chicken. In a 3 quart buttered casserole dish place layer of torillas, a layer of soup mixture and a layer of grated cheese. Repeat. Bake at 350 degrees for 30 minutes
PH: I found it on the web, I agree 5 oz doesn't seem like much but of course, I am sure the asker is smart enough to realize that cooking is about tweaking and finding what works for YOU and what YOU like. That is the joy.

King Ranch Chicken
1 green bell pepper, chopped
1/2 medium onion, chopped
1 can low fat, low sodium condensed cream of mushroom or chicken soup
1 (10 oz) can tomatoes with chilies
8 oz cubed chicken, cooked
4 corn or flour tortillas, torn in pieces
6 tbsp or 1/3 cup shredded reduced fat cheese
Cook meat in a dutch oven until brown.
Add onions and green peppers, to grill slightly.
Then add soup and tomatoes.
Layer tortillas and soup mixture in a small casserole dish. Sprinkle cheese over the top of the casserole and bake uncovered at 325*F for 40 minutes or until bubbly.

Here's mine hunny
KING RANCH CHICKEN
Cook 1 (3 1/2 lb.) chicken in boiling water for 1 hour. Remove chicken, debone and set aside. Dip one package of 12 corn tortillas (soft, found in refrigerator section) one at a time into chicken broth, and layer on bottom of 9"x13" casserole. Chop the chicken and layer on top of the tortillas. Pour sauce over the chicken and then top with 8 ounces grated cheddar cheese and 1 (10 oz.) can of chopped Rotel tomatoes (found in Mexican foods). Bake covered with foil for 1 hour at 350 degrees.
SAUCE:
1 can cream of mushroom soup
1 chopped onion
1/2 tsp. garlic salt
1 can cream of chicken soup
1 tsp. chili powder
1/4 c. chicken broth
Mix all ingredients and use in King Ranch Chicken. Serves 8.
