I love the Tyson buffalo chicken strips - fresh from the freezer.
Simply grab 2 or 3 out of the bag and nuke them.
You can get an iceberg lettuce and some tomatoes and make a simple base-salad. Cut up the chicken, toss on top and finish the whole thing with some Ranch Dressing to take off the burn. Makes for a great evening meal - plus it won't weigh you down too much.

Caesar Salad with Sauteed Shrimp

Get a pound of fresh shrimp (medium to large) peeled, deveined, with tails off
Bag of romaine lettuce (prewashed and chopped)
6 oz. shredded or grated parmesan cheese
1/2 cup Kraft Caesar dressing

Preheat a skillet over medium high heat. In a medium sized bowl, turn your shrimp in a couple of tablespoons of extra virgin olive oil 1/2 tbs. seasoning salt 1/2 of black pepper until coated. Cook shrimp in the skillet until completely pink. Set aside. In a large bowl, toss the romaine lettuce, parmesan cheese, and dressing until lettuce is well coated. Serve in individual bowls with five - seven shrimp on top (depending on what size shrimp you bought).

If there's an allergy to shellfish you could easily substitute the precooked grilled chicken strips from the deli section of the supermarket.

Taco Soup Recipe courtesy Paula Deen

2 pounds ground beef
2 cups diced onions
2 (15 1/2-ounce) cans pinto beans
1 (15 1/2-ounce) can pink kidney beans
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 1/2-ounce) can Mexican-style stewed tomatoes
1 (14 1/2-ounce) can diced tomatoes
1 (14 1/2-ounce) can tomatoes with chiles
2 (4 1/2-ounce) cans diced green chiles
1 (4.6-ounce) can black olives, drained and sliced, optional
1/2 cup green olives, sliced, optional
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package ranch salad dressing mix
Corn chips, for serving
Sour cream, for garnish
Grated cheese, for garnish
Chopped green onions, for garnish
Pickled jalapenos, for garnish

Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large slow cooker or a stockpot. Add the beans, corn, tomatoes, green chiles, black olives, green olives, taco seasoning, and ranch dressing mix, and cook in a slow cooker on low for 6 to 8 hours or simmer over low heat for about 1 hour in a pot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

OK, this one is healthy too...
Get a pack of whole wheat pita bread
put about 1/2 cup tomato sauce on it
top with low fat shredded cheese (and your favorite pizza toppings)
and bake @ 350 for about 15 minutes.

Sirloin steak dianne

* 2 (8 ounce) beef sirloin steaks
* 1 tablespoon butter
* 1/4 cup brandy
* 1 onion, minced
* 1 clove garlic, minced
* 1/2 cup red wine
* 2 tablespoons steak sauce
* 1 dash Worcestershire sauce
* salt and pepper to taste
* 1/2 (4 ounce) package button mushrooms, sliced
* 1/2 cup Dijon mustard, divided
* 1 cup heavy cream


1. Place the steaks between two sheets of plastic wrap; pound with a kitchen mallet to tenderize.
2. Melt the butter in a skillet over medium-high heat, and heat until it begins to smoke. Cook the steaks for 1 to 2 minutes on each side until they have browned. Pour brandy over steaks and carefully ignite. Once the flames burn off, remove steaks from the pan and set aside.
3. Cook the onion and garlic in the same skillet over medium heat until they soften. Stir in the red wine, steak sauce, Worcestershire sauce, salt, and pepper; mix well. Mix in the mushrooms, stir, and cook for about 5 minutes.
4. Meanwhile, coat one side of each of the steaks with 2 tablespoons of the Dijon mustard. Gently lay them on top of the sauce in the skillet, mustard-side down. Spread 2 tablespoons on top of the steaks. Cook 2 to 3 minutes per side. Remove the steaks from the sauce, and keep warm.
5. Stir the cream in to the mushroom sauce and bring to a gentle simmer. Reduce heat to medium-low, return the steaks to the sauce, and simmer for 1 minute more before serving.

Well, Missy...what do you have in the house? Unless you want to shop first. There's always chicken,most versatile of all meats...Chicken Parmesan and spaghetti with a side salad.

Go with Spagetti Bolognese.
Mince-Brown in pan.
Premade Sauce-add to mince,simmer
Pasta-boil until done.
Serve-add cheese on top if you like.
Time to prepare 3 mins.....cook about 12mins.

i had this problem yesterday! last night we had salad with all the goodies on it, and i cooked 2 chicken breasts (seasoned with black pepper, lawry's seasoned pepper and mccormicks cajun seasoning) in olive oil, with sauteed garlic, onions and red peppers...my man LOVED it--it took me about 40 minutes from start to finish.
btw: if you have to thaw out the chicken in a hurry, run warm water over it in a microwavable bowl, THEN put in the microwave on defrost setting.

hamburger meat, cream of mushroom soup, rotel tomatoes, noodles, cheddar cheese.
brown meat, season, drain
boil noodles, drain
mix all together, re-season to taste and top with more cheese.
quick, easy and good.
green salad or green beans on the side.
