The weather in Australia will be mainly hot and dry in the southern regions. In the northern tropics it will be very hot and humid. Throughout most of Australia, if you get much rain at this time of year, it will be in the form of an afternoon thunderstorm. That is: Very hot during the day, with a sudden wind change around 4pm and heavy rain and thunder for a couple of hours in the early evening, followed by clear skies the next morning.
It's important to remember to cover up in the sun, even if it's cloudy. The UV rating in Australia is very, very high, and you will get bad sunburned if you dont. Where sunglasses, a hat, SPF 30+ sunscreen and lose fitting, long clothes for the best protection. Severe sunburn can happen in less than an hour in many parts of the country, and it is very, very painful. (It could even be bad enough to ruin your holiday.)
In New Zealand, the temperature is more mild and it rains a bit more. Just remember that in the southern latitudes of NZ, the weather is highly unpredictable. A few years ago, I spent December - January on the South Island, and expected mild weather. It ended up snowing!

Australia is a big place and the climate varies. Across northern Australia, the monsoon has usually arrived. It is warm to very warm and humid with thunderstorms and rain most days and the chance of tropical cyclones. When it rains up there it is very heavy.
In central Australia it can get very hot indeed with temperatures regularly above 35°C and often over 40°C. If you are going to Uluru, do not even consider climbing it in those temperatures.
The wet season of the north extends down the east coast with Brisbane and Sydney both getting increasing rainfall. It will rain about one day in three in both cities and all points between. It is warm in Sydney and a little warmer in Brisbane. Average maximum temperatures in Sydney are around 22-28°C, Brisbane about 24-30°C. Occasionally you will get some very hot days with temperatures in the high 30s.
Southern Australia is dry, Melbourne, Hobart, Adelaide and Perth get little rainfall in December but can get very hot with Perth being the hottest. Mostly temperatures are warm with mild nights. In southern Australia in December I would take a jacket or sweater for the occasional cool evening but I wouldn't bother from Sydney north.

Well Australia is a big place. In Sydney it can get very very very HOT! A couple of years ago i went back for a visit (my home town) and it was 46 degress!
It will get more humid as you get further north.
Here in new zealand it can also get hot but not as hot. I live in Nelson (sunniest place in nz!) and it rarely gets above 32 degress celsius. It's usaully around 22-24 in the day and a cool 10 at night.

It is the start of summer for both countries.
In Australia it will be heating up nicely. Day time temps could be from 18 - 40 degrees celcius depending on where you are in Australia. Its a big country.
In New Zealand its a bit cooler. Day time temps could be from 12 -25 degrees celcius.

In one word hot.
It's our summer.
I've spent a number of Christmases in Queensland, Victoria and South Australia, it was hot in all of them. But, you just never know how it will be in Melbourne. That's just Melbourne weather for you totally unpredictable.

I have been there last January, the weather is very hot sometimes, but normally is hot , the ocean is so beautiful, trust me you will enjoy it , but be careful from the sun,

Very hot in Queensland, gets cooler as you move south.
Christmas in Sydney is great, try a Barbi on Bondi Beach for Christmas lunch. just remember to bring your bathers.
NZ is great but less extreme.
