These are the best peanut butter cookies you'll ever eat and they are so easy too! You can double or triple them very easily.
Peanut Butter Cookies
1 Cup sugar
1 cup peanut butter
1 egg
Mix well. Roll into small balls. Press criss-cross design with floured fork onto cookie sheet (or use bottom of drinking glass). Bake at 350 degrees for 8-10 minutes. Do not over cook!
Here's an easy no-bake cookie as well. These are very rich, but good.
Chocolate No-Bake Cookies
1/2 c butter or margarine
1/2 c milk
2 c sugar
3 T cocoa powder
Bring above ingredients to boil in sauce pan, boil for 3 minutes (don't over cook they'll be dry and crumbly).
Add:
1 tsp. vanilla
1 tsp. salt
3 c quick cooking oats
1/2 c peanut butter
Quickly blend well; drop by spoonfull onto a cookie sheet or waxed paper. Cool and eat. (You can omit the cocoa powder for a peanut butter cookie or you can add 1/2 cup walnuts or peanuts or coconut)

Here are some good family recipes:
ALMOND ROCA COOKIES
1/2 c white sugar
1/2 c brown sugar
1 c butter
1 egg yolk
1 c flour
1/2 tsp salt
1 (4 oz) chocolate bar
Chopped almonds
Mix together the sugar, butter and egg yolk. Add the flour and salt and flatten mixture out in a jello roll pan 15x11". Bake at 325º for 25 minutes. Meanwhile melt the chocolate bar for topping. When the above mixture is baked, spread melted chocolate over all and sprinkle chopped almonds over the chocolate. Cut into squares or bars.
SUGAR AND SPICE COOKIES
3/4 c butter
1 c sugar
1 egg
1/4 c molasses
2 c flour
2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
3/4 tsp cloves
3/4 tsp ginger
Form into balls the size of walnuts. Roll in granulated sugar. Bake in a 375º oven until lightly browned apx 12-15 minutes.

Here is the BEST recipe for Ginger snaps. My family and I have made them since I was a little kid
Ginger Snaps
1 cup sugar
3/4 cup shortening
1/4 cup light molasses
1 egg
2 cups flour (sifted)
1 teaspoon Cinnamon
3/4 Teaspoon ginger
3/4 Teaspoon cloves
2 Teaspoon Baking soda
Mix all ingredients together. Roll into small balls. Dip in sugar.
Bake 8-10 min at 350.
Great for Christmas treats or anytime! Enjoy!

The Betty Crocker's Cooky Book first published in 1963, when they baked and tasted the recipies before making the book, has been reintroduced. I grew up eating the cookies from this book. I got mine from Barnes and Nobles, but I found one last November for my daughter at Borders. It has regular recipies and at the back, large recipies. They include color photos and special occasion recipies and some foreign cooky recipes. A couple of my favorites from this book are Snickerdoodles, Chocolate Crinkles and Butterscotch brownies. (It even has directions to make a cooky house!)

Oatmeal Raisin Cookies
1/2 cup butter, softened
1/2 cup butter flavored shortening
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
3 cups rolled oats
1 cup raisins
Preheat oven to 350 degrees
In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth. Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture. Stir in the oats and raisins. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
Bake 10 to 12 minutes until light and golden. Do not overbake. Let them cool for 2 minutes before removing from cookie sheets to cool completely.

The red and white checked Betty Crocker cookbook is a great one that covers everything and is a household standard. The recipes don't really call for anything out of the ordinary and there is some great stuff in there. It is especially nice for those who are just starting to cook as it defines every process nicely and simply.
