You can cook meat loaf and baked potatoes in it, make cookies, bake a cake or pie in it - anything that you have the small containers that will fit in your oven. You can cook chicken pieces in it - a whole chicken might be too big for it depending on the size of your toaster oven. Your toaster oven might even have a rotisserie in it (like mine does) so you could do a small roast, small whole chicken, lamb, whatever.
As the others said, you can cook anything in it that you can do in a regular oven - just in smaller quantities. You can cook your regular sized Green Bean Casserole recipe in it, make a Quiche in it, etc.
The nice thing about a Toaster Oven is that when it's very very hot in the summer, you can put it on the back porch and do your baking/roasting out there and keep the house cool. We also have a 2-burner stove we have on the back pork so I can fix an entire meal out there without heating the house.
You can cook a roast in it with the potatoes, onions, and carrots too.

Anything that will fit inside, you didn't say how big the oven was. They are also great for heating up frozen burritos, reheating fried chicken, reheating leftover pizza or cooking a frozen pizza, my son cooks dijorno pizza's in his. Good luck and happy cooking!
