In Florida, the going rate for bartenders is $2.13 per hour ... you must make minimum wage or the bar is responsible to reimbursting you the remaineder of the minimum wage you did not make during your shift. So far, I've never met anyone who didn't make minimum wage as a bartender or waiter.

I've been a manager in 2 nightclubs. I started out a the bottom worked every position till I made it to the top. I live on the Gulf Coast of the Florida so we are a tourist town. We pay our waitress anywhere from 2.75 to 3.45 and hour but the waitress have to tip out there bartenders 20% of there nights making. Then the bartneders make about the same hourly as the waitress. Depending on what else you are hiring for such as security, door clerks. It' usually starts around minimum wage and up to 8.25 an hour. DJ's are usually paid by the night such as 100 to 150 a night.

In 2004 I was paying my waitresses $3.19 an hour, and they doubled as bartenders or I'd make the drinks. I cooked, and my assistant cook $6.00/hr, and his assistant $5/hr. The dishwashers got paid $25 a night.
This was all on the up and up according to my accountants. And I didn't mandate splitting tips, it was up to the servers to decide if they wanted to tip out for extra help. It was just suggested, then they had to file it on their time card. Keep an eye on the time cards for under-reporting of tips. Like if your bartender happens to say "Wow, I made $200 tonight!" and their time card claims $40, it's legal to adjust. Get good accountants, they're worth the money to make sure you're on the straight and narrow, and they give free advice once hired.

Usually the minimum wage for waitresses and bartenders is the same. I think it's around $3/hour. The law says that with the amount you pay plus their tips, they have to make no less than minimum wage.

For cooks it's different though, as they are not tipped. They make anywhere from minimum wage (for a salad prep guy with little to no experience, for example), up to $12 - $15 for an experienced line cook. This is something you would have to research in your local market to be competitive.

Every place is different. Some hall in the wall bars don't even pay you anything hourly. Others pay minimum wage if not lower.
