I like to buy bread in quantity, and freeze. I use it up quite fast, but no matter how long it's in the freezer, it always comes out hard. Is this common, or am I doing something wrong?

You are not doing anything wrong. The problem with freezing bread, is when it defrosts, it loses some of it's moisture. So, it goes stale. I would say, stop freezing it and just buy it when you need it.

I don't have that problem. I also buy bread in quantity and toss it in the freezer as soon as I get home. I pull out a piece and put it in my toaster oven on broil but on the bottom shelf to thaw it. It's never hard and I don't toast it to the crunchy stage. The only time my bread has been hard has been when the outer bag was accidently sliced in the store and I didn't notice it. Don't ever defrost it in the microwave - that definitely dries it out. You can also set the bread on a plate on the counter to thaw if you are going to make sandwiches - but only pull out the quantity you plan on using at the time, press the air out of the bag and reseal.

I have a big chest freezer. If you store your bread in a refrigerator freezer, remember the frost-free heats and refreezes so it will remove the moisture. It's OK there for a short period of time but if you have it longer than 2 weeks, put it straight away in a big freezer that isn't frost-free.

quit buying in bulk and buy fresh or bake some. if you freeze it, when you thaw it, do it still wrapped up tight in the fridge for a day or so. thaw it slow.
