and we have 2 graters. a really tiny one and a bigger one. when you grate the carrots,, is it best to make them really teeny tiny, or a bit bigger so there are actual carrot bits in it. thanks

Honestly, I would do both. The teeny tiny ones will give the cake a good color and taste....and the bigger ones will do the same...but offer larger pieces that let you visually know it's carrot cake.

I would use the larger grater and if you want your cake really moist, substitute almost half of the carrots with shredded zucchini. I did that once because I ran out of carrots and EVERYONE wanted the recipe!! They said they've never had a carrot cake so moist - and it still tasted like carrots.

I think it's up to you and how you would like it.
I prefer the carrot as small as possible, when I make carrot cake I grate the carrot then give it a quick whizz in the processor with half the flour. I know it's carrot cake but I don't like to see the bits of carrot.

oooh i love carrot cake id say its better with the little grater because you don't want to taste too much of the carrot!

It is totally up to you & your personal preference. I like slightly larger grating so that they show up a little in the cake so people can tell it from a spice cake without sticking their fingers in it. You don't want too big of pieces as they can be tough & chewy if they are too thick

I like the carrots a bit bigger. You should also add raisins and walnuts!!

My vote is to make them teeny tiny. I don't like having big chunks in my cakes, but that's just me!

Use the LARGE grater ---- when the cake is COOKED, it will be MOISTER, and you won't notice "large pieces" because the carrots will cook into the batter!

Much moister and YUMMIER w. LARGE grater!
