What can I sub for the eggs?

• 1 egg = 2 Tbsp. potato starch
• 1 egg = 1/4 cup mashed potatoes
• 1 egg = 1/4 cup canned pumpkin or squash
• 1 egg = 1/4 cup puréed prunes
• 1 egg = 2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder
• 1 egg = 1 Tbsp. ground flax seed simmered in 3 Tbsp. water
• 1 egg white = 1 Tbsp. plain agar powder dissolved in 1 Tbsp. water, whipped, chilled, and whipped again

Also, I am not sure why you want to replace the eggs, if you buy the Krustez pancake mix all you have to add is water (I think they probably have some egg products in the mix).

Most natural food stores have Ener-G Egg Replacer (you can also get it at Whole Foods). It's a mixture of various starches and leaveners that lasts forever and makes numerous "eggs." It is for replacing eggs in baking. You take 1/2 tbsp of the replacer to 2 tbsp of water per egg, mix it well, and then add it to your batter.

I understand 1/4 cup of silken tofu per egg also works.

Egg Beaters are made from eggs, so they are not suitable for vegans or someone allergic to eggs.

Next time you are at the store just buy a box of pancake mix to have on hand. Read the directions to make sure you only have to add water, cuz some are different. They taste just the same as scratch ones and you can have pancakes whenever you have the urge.

Pancakes Without Eggs


Mix 2 tablespoons of flour with a small pinch of salt, 2 or 3 grates of nutmeg, and a dessertspoonful of moist sugar.


Make a smooth batter, by mixing with the flour, etc., very gradually, half a pint of milk, and beat it fully ten minutes, adding a tablespoon of melted butter.


Fry the pancakes in the usual way, and serve them with maple syrup or powdered sugar sprinkled between them.


Time, ten minutes to fry each pancake

EASY PANCAKES

1 c. flour
1 tsp. soda
1 tsp. baking powder
3 tbsp. sugar
2 tbsp. oil
Pinch of salt
1 egg
1 c. buttermilk or 1 tbsp. vinegar in milk

Mix ingredients together in a container which can be used to pour batter onto a prepared griddle. Makes 10 to 12 pancakes.
