A lady I worked with gave me this recipe a long time ago. I served it in a pizza pan and because it was orange from the cheddar cheese, I used black olives for eyes and slices of bell pepper for the mouth to make a pumpkin. Enjoy!

TACO PIE

1 large can refried beans
1 1/2 lbs hamburger
1 small can diced green chilies
1 pkg shredded cheddar cheese
2/3 c taco sauce
1 pkg taco seasoning

Line pan bottom with refried beans (again, I used a pizza pan so it would be round). Cook the hamburger and drain. Add the package of taco seasoning and mix well. Spread over the beans. Spread the chilies over the hamburger. Sprinkle the cheddar cheese over the chilies. Pour the Taco sauce over the cheese. Cook in a 400º oven for 20 minutes. Serve it with Tortilla chips or some kind of sturdy chips that can scoop up the goodies.

Sometimes I even put dollops of sour cream on the top but if you want it to look like a pumpkin, don't do that. You can also use Cojack cheese instead of all cheddar if you'd like. Either way it's WONDERFUL!!

You can make it ahead of time, cover with saran, and just heat it when you're ready. Nice and easy.

If the party falls around dinner time..make an entree appetizer like Baked ziti or lasagna and serve with a big bowl of salad or tomato and cucumber salad and a few sliced loaves of Italian bread.

A variety of cookies for desert. Wrap bacon around hot dogs for an appetizer. Or cheese and crackers. Vegetable dips. Buy brown bread in a can and add cream cheese and olives.

here are some
Easy Shrimp Cocktail Bites
1/2 cup cream cheese, softened
1/4 cup seafood cocktail sauce
2 English cucumbers
36 large shrimp, peeled and deveined
fresh dill sprigs for garnish (if desired)
Cook shrimp in boiling water until just pink - about 3-4 minutes. Drain and refrigerate until chilled.

In a small mixing bowl, combine cream cheese and cocktail sauce. Mix well.

Slice cucumbers on the diagonal, about 1/4 inch thick. Spread or pipe about 1 teaspoon of the cream cheese mixture onto each cucumber slice. Nestle the shrimp on top of the cream cheese mixture and top each appetizer with fresh dill.

Makes about 36 appetizers.

Teriyaki Shrimp Skewers (makes about 20-25 servings of 3 shrimp each)

3 pounds large shrimp, shelled and veins removed
1 cup teriyaki marinade (recipe below)
3-5 green onions, finely chopped
3 teaspoons grated lemon or lime zest
3 cups fresh pineapple, cut into chunks
50-75 bamboo skewers, soaked in water for at least an hour before use
Combine marinade, onions, and zest in a small mixing bowl. Place shrimp in a large shallow pan and pour marinade over top. Stir to coat shrimp with marinade. Cover and refrigerate for at least 4 hours, or for up to 12 hours, stirring and turning the shrimp occasionally.

Thread the shrimp and pineapple onto the soaked skewers by placing pineapple in the curve of the shrimp, and pushing the skewer through the tail, pineapple chunk, and head of the shrimp. Thread as many shrimp per skewer as you'd like per serving.

Preheat grill. Grill skewers over direct heat for about two minutes per side, until shrimp is cooked through (no longer translucent). Alternatively, preheat your oven and broil skewers on a baking sheet for the same amount of time.

Serve warm.

Cookie Art
1 pkg. (8 oz.) refrigerated sugar cookie dough
All-purpose flour
2 eggs (separate yolks from whites)
1/2 tsp. water
Assorted liquid or paste food colors
Small candies or miniature semi-sweet morsels (if desired)
Preheat oven to 350°F.

Place roll of dough crosswise in middle of 11" x 15" jelly roll pan; let stand about 5 minutes to soften. Sprinkle dough with flour and roll or press into one large rectangle about 1/4-inch thick.

Dip cookie cutters in flour. Press designs into dough for a picture. Add details using a small knife.

In small bowl, mix egg yolks with water. Carefully divide egg yolk mixture into several small bowls or custard cups. For each desired color, add 1-3 drops food color to each cup and mix well.

Paint cookie dough using small craft paint brushes. If "paint" thickens, stir in a few drops of water. Decorate cookie with small candies if desired.

Bake 17-18 minutes or until light golden brown. Cool 10 minutes. Cut cookie into pieces and serve.
