BOMBAY POTATOES
3 large potatoes
2 tablespoons brown mustard seeds
2 1/2 tablespoons cooking oil
1 1/2 chili powder
1 teaspoon turmeric powder
salt to taste
coriander for garnishing
Peel the potatoes and dice into bite sized pieces. fill a deep pan with water and boil the potatoes with a pinch of salt until they have cooked throughout.
When the potatoes are done rinse under cold water, making sure the potatoes do not break.
In a non-stick frying pan, heat up the oil. Once the oil is hot, (not so hot that a blue haze appears), add the mustard seeds and cover with a lid.
Lower the gas to the medium setting. The seeds will soon start to pop; lower the heat and add the chili and turmeric power and stir. Ensure the powder mixture and seeds do not burn!
Add the potatoes to the pungent oil and stir slowly for a minute until the potatoes are covered in the seeds and they turn a light yellow due to the turmeric.
Remove from the heat and garnish with coriander.
Note: It is recommended that a minute before removing the potatoes from the heat, the heat should be turned up and the potatoes allowed to become crispy; this adds more flavor.

Ingredients
4 tbsp oil
¼ tsp mustard seeds
2 pinches of chilli powder
¼ tsp turmeric powder
350g/12oz potatoes, boiled and quartered
salt to taste
Method
1. Heat the oil in a pan on a medium heat setting.
2. To check that the oil is hot enough, sprinkle in a few mustard seeds, if they pop the oil is ready. Then add the remainder of the mustard seeds.
3. Add the chilli and turmeric powders to the sizzling seeds, and salt to taste.
4. Fry this pungent mixture of oil and spices for 1 minute then add the potatoes. Fry for about 4 minutes until the potatoes are smothered in seeds and appear to have crispy edges. They will look quite yellow in colour. Cover the pan and on a low heat, cook the potatoes for a further 5 minutes.
5. Serve immediately.
You boil the potatoes first then fry them.

1 ONION medium sized, peeled and finely chopped.
1 tbsp(s) MANGO CHUTNEY
450g POTATOES cut into 25mm cubes and par-boiled.
1 qtr tsp(s) SALT
2 tbsp(s) WATER
1 tsp(s) GARAM MASALA
2 tbsp(s) MEDIUM BOMBAY CURRY MIX
Heat the oil in a frying pan and fry the Garam Masala and onion until lightly browned.
Add the Mango Chutney, Curry Blend and Tomatoes and fry gently for 1-2 minutes.
Add the potatoes, Salt and Water, and continue to cook for a further 5 minutes or until the potatoes are tender.

Bombay Potato
INGREDIENTS:
4 tablespoons vegetable oil 8 tablespoons Curry Masala Sauce 2 tomatoes, roughly chopped
1-1/2 pounds new potatoes (or large, older ones, quartered), cooked salt to taste SPICES: 2 teaspoons Garam Masala (storebought or homemade)
1 teaspoon turmeric 1/2-2 teaspoons ground red pepper (cayenne) 1/2 teaspoon mango powder
1 Heat the oil, and stir-fry the spices for 30 seconds, then add the curry sauce. Stir-fry to 2 minutes, then add the tomatoes and simmer for 5 more minutes.
2 Now add the cooked potato, and simmer until hot. Salt to taste.

the above recipes are good.but if you want really HOT bombay potatos.
prepare potatos
bring water to boil.
cut 1 or more chilli peppers into small pieces,including seeds.
put the peppers in water ,turn heat off.leave the peppers to `mash `in water for 10 minutes.put pan on heat and add potatoes,cook potatoes and then follow one of the above recipes.

Fry onion add chilli,turmeric,coriander, cumin,
Add diced spuds to mix give a quick cook & then cook in microwave.
Add salt & pepper to taste
Add chopped spinach cook till spinach done.
Not a true recipie but comes out ok.
