When Creationists say "Evolution" they mean the scientific understanding of the universe as we know it. The mean geological time, astro-physics, physics, archeology, anthropolgy, linguistics, chemistry, history, etc. All these things coincide and confirm what they call one monolithic "Theory of Evolution." They can't have it both ways, each of these disciplines and more are factored into every other thing we know, to create a scientific worldview. If they throw out what they call "The Theory of Evolution", they have to throw out just about every other scientific discipline there is, because it all meshes together.
If they just attacked what evolution really is (speciation over time) they might have a chance at preserving science, but they can't do that, they need to prove their viewpoint right even though it contradicts so many facets of science independent of what evolution really is.

Science is not satan's work in any sense, God commissioned science in Genesis, to Adam He said 'Go subdue the earth, and rule over it' To rule the earth effectively we need to understand it, how plants need water to grow etc.
Evolution doesn't represent science, it is largely speculation based on very few facts and massive timescales to account for the amount of change which 'must' have happened so it must have happened incredibly slowly...
I haven't worded the above that well but I do recommend Michael J Behe's book 'Darwin's black box, the biochemical challenge to evolution' written by an athiest/agnostic I might add!

The philosophy that masquerades as science is what is wrong, not the science itself. What is wrong is evolution is trying to force people to accept a philosophy that has no actual proof and then claiming that because as a science of course it must be true and beyond question.

UPDATE:
The Bible does not support the 7/24 hour days of creation, it has been shown that there is a difference between humans being on earth for 6,000 years or so!
--AND the earth SUPPOSEDLY being some 10,000 years old, when thermo-dynamics show among geological findings along with other TRUE sciences that the earth could be at least 4-5 billion years old!

According to Francis Collins, head of the Human Genome Project, science is the "language of God." If God is truth, then truth is not offensive to him.
He gave us brains to (try to!) figure this stuff out--don't make him and yourself look silly by ignoring reality!
