Why does it use 2 EE's and 2 UU's when it translates the United States into Spanish?

It is because "Los Estados Unidos" is plural that it's abbreviated in EEUU.

Other examples:
Fuerzas Armadas=FF.AA. (armed forces)
páginas=pp (pages)

But, it's not the case for all plurals, just for some.

Because there are more countries that use "Estados Unidos" as part of their oficial names, Brazil for one example. To solve the issue it was decided long ago at the "Real Academia de la Lengua Española" that the abreviation for USA in spanish be EE. UU.

I guess because Los Estados Unidos are plural.

No. My mother and her family HAD to learn English when they emigrated here from Europe in the 1950's, as a requirement of sponsorship. So as far as this immgrant's daughter is concerned; иммигранты должны выучить поговорить английскую язык, как хорошие американские граждане.

To be clear, the European Union in Spanish is "Unión Europea."

probably to distinguish it from E. U (European Union) for the benefit of English speakers, just guessing
