lots of peppers this year - was thinking that i could use them in a relish that uses green tomatos and bell peppers, but not sure if thats possible or what the proportions to that would be - any one out there have any ideas for that?

hot pepper relish


18 hot peppers
14 green romono tomatoes
2 sweet onions

Grind or chop above ingredients. Drain and cover with 1/2 cup salt and boiling water for 1 hour.
Bring to boil:


1 cups sugar
3 cups cider vinegar
2 tbsp. celery seed


Drain pepper mixture well. Put in vinegar mixture all chopped ingredients. Boil 2 minutes. Put in hot jars and seal.

I use this recipe for hot pettper relish. You could chop up some hot peppers in place of some of the bell peppers, but I'd omit the hot pepper flakes if I did. And, it doesn't contain tomatoes, but you could add some if you like, or use tomatoes instead of some of the bell peppers:

Hot Pepper Relish

3 cups finely chopped red bell peppers, (about 1 1/2 pounds)
1 cup finely chopped yellow bell pepper
2 cups finely chopped onion
2 cups cider vinegar
3/4 cup sugar
2 teaspoons mustard seed
2 teaspoons salt
1 to 2 teaspoons crushed red pepper flakes

In a heavy saucepan combine the pepper, onion, cider vinegar, sugar, mustard seed, salt and red pepper flakes. Bring mixture to a simmer and cook, stirring occasionally, for about 1 hour, or until reduced to about 3 cups. Relish will keep covered in refrigerator for about 1 month.

Try making Chowchow. Sounds funny, but it's an excellent rellish that is popular in the South. It's incredibly good with greens, eggs, beans, and chicken. If you would like a simpler recipe than the one I've supplied in the link below, search the site for "chowchow" and "pepper relish". Tons of great recipes there!

right your love this:ingredients 2 ur own taste
fry onions and garlic in oil up a bit then add plenty of plum tomatoes/vine tomatoes(the better quality the better the sauce). heat a lil bit longer then add your own chillies and coriander,also i use the big sweet peppers - not bell, (again the fresher the better) , and the best bit enjoy

FIRE ROASTED
PEPPERS
ONION
TOMATILLOS
GARLIC
add corn syrup,vinegar,salt and pepper, for seasoning
peel all chop or julliene,veggies,marinade in seasoning and can,jar or even seal in freezer-bags (seving sizes) for later !!
