Does anyone know what it is called when people pronounce their R's with a sound that's very much like the letter W

Oh, that's easy, it's called rhotacism. It refers not only to Jonathan Ross' speech (Wossy they call him!), but it also refers to several phenomena related to the usage of the consonant r .
