The easiest way is going on a diet yourself, and maybe ask her to join you for moral support. It's important that you don't demand this!!! Ask for it as a favor to you.
Also if you frequent a gym, you could ask her to come spot you and keep you company. Once again her reaction will depend on how tactful you are while asking for this.

Tell her you're concerned about YOUR health and want to take steps to make it better. Stop bringing junk food into the house or eating it around her, start eating healthier and going for walks. If you eat together, chances are her diet will change too. If you're underweight or the right weight you can add calories when you're not around her by drinking protein shakes or something!! Ask her to join you in physical exercise like hikes, parking the car at the far edge of the lot, taking stairs instead of elevators, etc. Chances are she already knows she's overweight-- most people are even harder on themselves than others are. Bringing it up could backfire and make her angry at you, which might cause her to binge or something!

Tell her tht you want to lose weight, and ask her if she will be your support buddy. Tell her that you need someone to be in competition with. Set a goal, and ask her to set a goal. Then tell her that the one to reach their goal first will get the prize, and the other one will have pay for it. It could be a dinner at a nice restaurant, or tickets to a concert, etc... Then suggest that you and she go out to eat salads often.

Why do you want her to go on a diet? For you or her?
If it's for you, then you need to think about why you want her to go on a diet .. because you want her to be thinner so she's better lookin'? Then go find someone who is as shallow as you!
If it's for her, as in you are worried about her health, then cook her healthy dinners and make her healthy lunches and go exercising with her!

Either very carefully or don't do it. If she has a weight problem and it is bothering you, why do you go out with her in the first place? If you can't see past her weight, then you are quite shallow and don't love her for her.
How is YOUR weight/height proportions?

tell her this.........i love you the way you are but i think we should be more healthy together, so we'll go for walks and eat better, not for you or me to lose weight or look better, but because we're doing good things together and it will build our love for one another even more if we do what is right for us
