If you have a crock pot you can plug it in and make chili, soups, if you get a roast and put in with can of cream soup and pack of dry onion soup and water it makes its own gravy so all you need to do is instant mashed potatoes or rice. Eggs salad, frozen pizza, tv dinners, stouffers vegetable lasagna is good. tacos, french toast, grilled cheese, mountain pies done in a pan take your fillings--could use eggs and cheese--pie filling, peanut butter & marshmallow, pizza toppings anything you want then just grill like you would grilled cheese.

I agree with Midolque. Get a crock pot! (AKA slow cooker)There are so many tasty recipes you can find on line. The best part is, you can put everything in the crock pot, turn it on when you leave for class and it's ready when you get back, anywhere from 2 hours to 10 hours, depending on what you make. Be careful though you might have a crowd around your door from the great smells! Check out the Betty Crocker site. Crock pots come in many sizes so if you get a small one, you won't have to cook a crap load of food at once. Don;t worry about leaving something cooking while you are gone. Because it's a slow cooker, it won't reach a temperature that can catch anything on fire if you set it for more than 4 hour cook time. Make sure it has the option to select the amount of time to cook. some of the smaller ones only have on and off. These will cook to fast. Happy home made food. P.S. Call your mom or grandma, I bet they have some recipes for you. If not, have your roommate call their mom. Oh hell, just order a pizza!

Egg Casserole
this one looks easy

1 10-ounce can cream of celery soup
2 tablespoons milk
1 onion grated
1 teaspoon dijon style mustard
1 cup cheddar cheese, shredded
6 eggs hard-cooked, peeled, and cut in half lengthwise
1/2 teaspoon dried parsley flakes, crushed

Combine soup (may substitute with cream of chicken soup), milk, onion, and mustard in saucepan. Cook and stir until smooth and heated through. Remove from heat, add cheese and stir until melted. Pour 1 cup sauce into 2x6xl0-inch baking dish. Place eggs, cut side down, into sauce. Spoon remaining sauce around eggs. Bake at 350 degrees F. for 15 minutes. Sprinkle with parsley. Serve over cooked rice or toast

First so happy you are going to college and to be in the first year must really be fun and also a challenge. It's so important to get enough to eat and rest so you will feel sharp in class.

I can help you with the eating that is for sure. If you and your roomie take a couple hours on the weekends or any other time to cook up some dinners you will be relieved to have food ready in seconds when you walk through the door....here are some suggestions that you can microwave:

If you have a Wal-mart go to their frozen food section and get a large bag of "Birdseye frozen mixed veggies" there are about 3 or 4 different styles I get the "oriental mix" It has so many great veggies in it.

Then go to the soup section and select your favorite creamed soups. Grab a can of cream of celery, cream of mushroom and cream of chicken.

If you want meat you can get some chicken breasts that are boneless and skinless. Cut them into chunks and freeze them in little baggies for the freezer. Usually 1 whole chicken breast will feed two or four.

Then go to the canned fish isle and get a large can of white tunafish usually the albacore is the best for a casserole.

Now go to the diary section for some cheddar cheese. The mild or sharp is the best for cooking. Now you have the ingredients for a couple different meals. that tastes like home cooking.

In a pot of boiling water about 1 cup....place the veggies in there until tender follow directions on bag. Then when done drain and add some salt, pepper and margarine or butter for flavor. Now pan fry the chicken in butter and olive oil.just enough oil to cover the pan .the chicken needs to be seasoned with salt , pepper and dried thyme. cook until no pink juices flow and it's light golden. when done add to the veggies. Now open the soup (your choice). Then add about 3/4 soup can of milk to the soup. Mix this well and add to chicken and veggies. Grate the cheese about 1 cup and set aside. Butter a casserole dish and place ingredients in the dish and top with cheese. Bake in oven 350 degrees for about 40 minutes. uncovered until the cheese melts and it's hot and bubbling.

Next time you want to make a quick tuna casserole layer cooked egg noodles , cooked frozen peas drained, canned tuna and 1 can of creamed soup like cream of mushroom or cream of celery...and dilute with a soup can of milk...then add some grated cheddar cheese about 1 cup. Top with plain breadcrumbs and bake for about 40 minutes....

Whichever dish you plan on making ....buy some canned fruit like peaches, pears or fruit cocktail..that you have chilled in the refrigerator...and get a loaf of sliced Italian bread you can use for many different things.

After you have these dishes once you might have enough left to reheat in the microwave oven. You can always divide the leftovers and put in individual single servings and placed in the freezer..then it can be defrosted and nuked...

When I cook I try and make everything balanced with texture and color and it ends up pretty healthy. If I'm baking a potato and have meat then I need something green and red...like spinach and sliced tomatoes...or yellow corn or sweet potatoes...it's like painting a picture...you need a variety so it's not bland. Good luck to you both in your studies..

AWESOME EGG SALAD

12 bacon slices
8 large hard-boiled eggs, peeled, coarsely chopped
1/3 cup finely chopped celery
1/4 cup chopped pimiento-stuffed green olives
1/2 cup mayonnaise
1 tablespoon Dijon mustard

12 slices white sandwich bread, toasted
12 red leaf lettuce leaves

preparation: Sauté bacon in heavy large skillet over medium heat until brown and crisp, about 8 minutes. Using slotted spoon, transfer bacon to paper towels to drain. Cut bacon slices crosswise in half.
Combine chopped eggs, celery, and olives in bowl. Mix in 1/4 cup mayonnaise and mustard. Season with salt and pepper.

Place toast slices on work surface; spread lightly with remaining mayonnaise. Divide egg salad among 6 toast slices. Place 4 bacon pieces, then 2 lettuce leaves atop egg salad on each. Cover with remaining toast slices, mayonnaise side down. Cut sandwiches diagonally in half.

Makes 6 servings.

Eggs, brown rice, whole milk, peanuts, raisins, sea salt = delicious and nutritious rice pudding.

Cook rice. Blend eggs and milk, add to rice, put back in microwave for 30 seconds to pasteurize eggs. Wait 2 minutes, then add peanuts, raisins, and salt. Enjoy.

P.S. It's more like soup than pudding, but good anyway. I suppose if you heated it for additional 30 seconds then refrigerated it, it would turn to pudding, but I don't have the patience, especially when I'm hungry.

You didn't say what kind of cooking equipment you have. Do you have a regular stove? do you have a microwave? Do you have just a burner coil?

If you have an oven, I'd do bisquick impossible pie recipes. You can throw canned tuna or chicken or canned beef in them.

If you don't have an oven, but just a cooking coil, I'd do a stir fry.

What about a curry. Grab a heap of vegies in season, a curry paste you like and a tin of lentils or chickpeas (if you buy the pack and soak some yourself its even cheaper) cook it all up in a saucepan and dig in.

one really interestingly different but really good meal is to take eggs and scramble them and mix rice and cheese in with them...its a super easy thing to make and you can eat it for any meal of the day.

you can do a lot with eggs...try cooking them in different styles...scrambled, hard boiled, etc.

hmmm....have you considered sandwiches? there are tons of different types of sandwiches you could make...just go to foodnetwork.com and search their recipes for sandwiches...you'd be amazed at how easy they are to make yet how "high class" they can feel :)

Enjoy!
