I am getting ready to fry over 40 lbs of fried chicken and would like to be able to fry it ahead of time.

The two responses you have already are good ones but I wanted to let you know that once you freeze them, they won't be crispy anymore. And the crust won't taste as good once it's been frozen. I freeze fried chicken all the time (like KFC and homemade). I generally thaw it, pull the meat off the bones and make something else with it - tossing the coating. Sounds like you are having a party. Even refrigerating the chicken changes the crust. I love cold chicken as much as hot. Are you serving it cold?

YES! I've done this. Freeze them in a ziploc bag and then when you want chicken again, just reheat on a cookie sheet in a 350 degree oven for about 25 minutes.

The vacuum sealed bags would keep it freshest. If you have time, try some first to experiment.

I'd recommend breading the chicken with Panko Japanese Style Breadcrumbs. It tends to stay crunchier than regular bread crumbs, and might come out with the crunchiness in better condition.

put it in a freezer ziploc and then put it in the freezer. dump the chicken into a pan and heat it up in the oven or microwave when you want to eat it.

After it's done cooling, vacuum seal it and put it in a deep freezer.
