I just make sure the meat is cold if cooked or partially frozen if raw and then use my slicer knife. The blade is thinner than a chef's knife or french knife. Use a 2-prong fork to hold the meat and then slice away. It takes some practice, but you don't need anything fancy.

I run a restaurant right outside of Memphis and there is a trick you can use when you do not have a commercial slicer. If you have a very sharp meat knife freezing the meat will allow you to cut paper thin slices. Make sure you freeze small chunks to allow it to freeze quickly, and to be able to cut it with the knife. On most meats with the right knife it can be very effective. I hope this helps, and gives you a viable option.

We buy ours already 'shaved'. Go to the refrigerator section of the supermarket and you will find containers of all types of shaved meats. We like the Hillshire Farms best of all. But there are several good brands.

The supermarket's deli will shave meats for you too.

Our favourite sandwich this week is shaved honey ham and shaved pastrami, maybe a slice of cheese and maybe not. Don't want to take away the flavor of the meats. lol

My second favorite is Hillshire's shaved salami.

First of all you need a Very sharp knife.
You need a well cooked piece of meat, and you Must slice with the grain. Do not use a sawing motion. Draw the knife through and pick it up and draw it through again, etc.
Of course it will help if the knife is a carving knife.

Leave it to chill in the fridge and it will firm up.
Use a very sharp knife. I find it easier to shave the meat like they do with ham at the deli counter.

You could try an electric knife. I have one, and it cuts Turkey and Chicken very thin.....for sandwiches...etc. or those party roll ups. Where ya put the Turkey or Chicken out flat, and in it add a dill pickle, and any cheddar cheese, and some sour creme,,,, then roll it up, and afix it with using a toothpick.....add an olive.....and VO-LAW.....instant party favor food....add some chips....place on a tray or platter in a circle and add chips and dip.
Oh sorry man,,,,,,, here I am giving ya great reciepe idea's, and the question was ? some way (Inexpensive way) to cut meat thin ?????

Put the meat in the freezer(if its raw) for a few hours before slicing, this makes it easier. Be sure to use a really sharp knife. :)
