a friend gave me some bear meat and i need a recipe

BEAR STEW

3 slices bacon, cut up
4 med. onions, quartered
4 med. potatoes, quartered
1 pkg. fresh or frozen green beans
3 bay leaves
2 lbs. bear, cubed (or venison, elk, etc.)
4 carrots, sliced
1 pkg. fresh or frozen peas
1 (46 oz.) can tomato juice

Brown bacon in heavy kettle. Add bear and brown on all sides. Add onions and saute. Add all remaining ingredients and simmer 1 hour or until flavors are mixed and vegetables and meat are tender. Remove bay leaves.

Crock pot would be the best way. Game meat is generally tough and the slower it's cooked, the more tender it will be. I'd recommend cutting it up for a stew or do it roast style in the crock pot. People hunt bears, people! That's how they get bear meat!

Not just a joke, either. Bear is the only meat besides pork which can harbor trichinosis. Pork can be inspected, sick animals isolated, etc., but who know where the bear's been and how he was feeling?

I'd suggest a stew, cooked long over low heat to impart tenderness. The meat may be fatty, so be prepared to skim that off.

What ever recipe you choose make sure that if it is not ground meat that you clean any membrane from the meat. that is what hold the gamy flavor that and any connective tissue (tendons etc) you can choose to brine it for 12-36 hours before you use it to help ensure that the blood is drawn out of the meat but be sure to rinse it and pat it dry before using.
Cook to an internal temp of at least 160 degrees (to allow for 5 degree carry over once removed from oven) or if you stew let it simmer low and slow until desired tenderness.

When I visited Finland, I had a bear stew that was awesome. (no, it did NOT taste like chicken). You might search the web for recipes, and include "finland" in the search to get Finnish recipes.

I do suspect that it has to have been field dressed properly and never frozen to be that good.

The word I get is that it should be cooked well done the same as pork. I hear it can be a bit greasy so you should roast it on a rack. Better yet, look here:

I havent tried it yet and havent had the chance to hunt one down so tell me how it turns out. By the way I've also been told that if it's been eating fish you'll know for sure when you eat it.

If you had enough bear meat. Get it made into sausage. Bear sausage is the best.

Bear Lasagna
Sauce:
1 can whole tomato
1 can crushed tomato
1 can tomato puree
2 can tomato sauce
1 can tomato paste
1 finely chopped garlic clove
1 half small onion
1 tsp basil
Italian seasoning (thyme , oregano ,rosemary ) two table spoons
1 tsp. sugar to take acid out of sauce (optional) or baking soda
1/4 cup red wine (optional
mint leaves
pepper (optional)
Italian grated cheese (just a pinch)

Simmer on low heat for at least 6 hours

Bear:
1 lb package sweet Bear sausage ( this is made half pork and half Bear meat )
1 lb package hot Bear sausage
1 lb package hamburger meat (you can use Bear hamburger)
(Bear sausage is a blend of pork and Bear meat seasoned and stuffed in casings)
Take meat out of casings and fry over medium heat till browned
add chopped onion for flavoring with crushed garlic
Fry hamburger till browned
Set aside in a bowl
In a large bowl mix 2 lbs of ricotta cheese /or cottage cheese
2 tlb spoon parsley
4 large eggs
Blend well set aside
Use no bake lasagna noodles 2 boxes
In a large baking dish cover bottom of dish with sauce
then lay noodles then sprinkle the meat out over the noodles
then spoon ricotta cheese (about 4 large spoonfuls dropped indifferent areas)
sprinkle mozzarella shredded cheese (two packages of mozzarella )
continue to layer (I layer one vertical then horizontal just easier to dish out )
top off with noodles and cover with sauce ,cover with foil
Bake at 350 degree oven for 1 hour
Feeds 8 to 10 people


Bear Sausage
30 lbs. ground bear meat
6 tsp. red pepper
12 lbs. ground pork butt
15 tsp. garlic salt
3 lbs. slab bacon, ground
7 1/2 tsp. pepper

Mix all together. Fry in pan for breakfast sausage, good on pizza, and
makes great meatballs as well.

I'd imagine its a bit tough and gamey... similar to venison probably.

A stew would probably be best... let it cook all day with some onions, carrots, potatoes, celery, tomato, chicken broth, spices... make sure to cut the meat into smallish chunks which are easier to bite and swallow.

Thats what I do with venison and it tastes great. And the longer you let it cook, the more tender it gets. 6-8 hours minimum at low-medium heat.
