The secret is to blanch the bacon, before wrapping.
Place in boiling water for 3 minutes, to remove some fat.
You could also marinate the chicken in a salad dressing.
You may want to cut up chicken in chunks, wrap, & skewer.
Then you can brush with fresh dressing & grill them.

Yes you can wrap it in bacon... But I have a better suggestion.
Go to any grocery store and buy a herb and garlic seasoning. Now, cooking chicken in the oven can very tricky, if yours is coming out dry you are overcooking. So, instead take out a skillet and coat the bottom with oil (veggie or canola doesn't matter) fill it to about a finger nails worth with the oil. Cut your chicken up into strips and make sure they are not too thick. Cook on medium heat and put the chicken in the pan coating the upside with the seasoning you bought. Now turn it about every 5 minutes coating it with the seasoning as you go until it is golden brown on both sides. Take it out, serve with wild long grained rice (kinda yummy and you can put the seasoning in here too).
You are done and this took about 15 to 20 minutes with the prep. Enjoy your dinner and I promise it will be juicy and tasty :)
Note: If you don't like garlic and therefore want a different seasoning, feel free to browse while you are in the seasoning isle. They have lots of different chicken ones :) herb garlic is just my favorite!

i would say to cook the chicken and bacon seperatley and marinate the chicken in italian dressing and salt and pepper and any other desired seasonings to add flavor. Then when they are both done wrap the bacon around the chicken and put a toothpick through the bacon and chicken together. Eat them like cobbobs very delicious my favorite meal i make at home i make it for family parties and it is always a hit everyone loves it and so does my husband and 7 year old daughter! They actually sell chicken or turkey filets with the bacon wrapped around just like filet mignon. I think the thing is that they are shaped like a hockey puck and about the same size, with a strip of bacon wrapped around the outside, you could cut the chicken into shapes like that, when you fry them in a pan or grill the bacon does not make contact directly with the grill as it is around the outside not on the top or bottom. They use toothpicks to hold it one. Usually cook slow at lower heat.

Try this:
BACON WRAPPED CHICKEN
boneless chicken thighs or breasts
thinly sliced bacon
portabella mushrooms
Slice chicken and mushroom into strips. take one strip of chicken and one strip of mushroom, wrap with a slice of bacon. Skewer with a round wooden toothpick which has been soaked in water for 1/2 an hour.
Grill over hot white coals until the chicken is cooked through and is no longer pink.

Saute the chicken first for about five minutes (both sides)then take it out the pan and wrap the un-cooked bacon then stick it in the oven for about 20 minutes but make sure you don't cover it, but when you are sauteing it season it with thyme seasoning. And if you want to get creative when you are cooking it in the oven sprinkle some bread crumbs, while its cooking you can also whip up some mac & cheese as a side dish for your chicken.

Marinate your chicken in Italian Salad Dressing overnight, and I guarantee you juicy chicken! The other thing is to not overcook it. 45 minutes at 350 degrees should be plenty long enough to get the job done. If you are going to do chicken breasts with bacon, how about cutting the breasts into chunks and using peppered bacon? You can marinate your chunks and then wrap them in slices of bacon, skewer them as in kabobs, alternating with onion and mushrooms, then grill them until cooked thru.

/2 cup teriyaki sauce
1/4 cup dry white vermouth
1 1/2 tablespoons chopped garlic
4 boneless skinless chicken breasts
vegetable oil
8 slices bacon In a ziplock bag, combine the teriyaki sauce, vermouth and garlic.
Add chicken and coat with teriyaki mixture.
Refrigerate at least 3 hours.
Prepare BBQ for medium high heat.
Brush BBQ rack with vegetable oil.
Remove chicken from marinade and wrap each breast with 2 strips of bacon, covering completely and securing with toothpicks.
Grill chicken until it is firm to the touch, about 15 minutes, turning occasionally.
Serve.

5-6 boneless skinless chicken breasts
2 lbs of center cut bacon
1 (15 ounce) can chipotle chiles in adobo
1 cup sour cream
1/2 cup milk
2 chicken bouillon cubes
Pre-heat oven to 350°F.
Wrap chicken breast in a slice or two of bacon depending on size of breast vs. size of bacon.
Place wrapped chicken breast onto a non-stick oven safe baking sheet/dish.
Cook until completely done, usually takes about an hour, hour and a half.
When chicken breast lack about 20 mins from being done, you can start preparing the chipoltle sauce.
Combine chipoltle peppers in adobo sauce, (you may only want to use a couple of them as these little guys can be quite potent, add to taste), with sour cream and milk, blend in the blender until there are little to no chunks left of the peppers.
Once you have this blended together add to a small sauce pan and simmer on low to medium heat and add the 2 cube of chicken bullion for flavor.
Add salt and pepper as desired.
To Serve: Place chicken on plate and pour chipoltle sauce on top. Also works greats as an appetizer at parties, cut chicken into small bite size pieces and serve sauce in a bowl.

Simply take your chicken breast and pound out. semi butterfly and stuff with whatever filling you like. basil or cheddar, whatever really. then wrap with bacon and put toothpicks in. you dont need to stretch the bacon. the bacon should not burn. be creative and have fun!

i work in a meat market and we do sell quite a few chicken broils. what we do, we get about a 7 oz piece of chicken and wrap one slice of bacon around it. we also make a chicken broil that we put stewed tomatoes and basil leaves in them. also if your chicken gets too dry, you probably are cooking too long. once the juices run clear out of the breast it will cooked though.

The Golden Corral restaurant serves their broiled chicken breast this way. It's rather dry, but I dip it one of their sauces.
