Cheesecake Cookies
My Great Recipes - Card #47 Cookies

For about 4-1/2 dozen cookies you will need:

1 cup butter or margarine
4 oz. cream cheese
1 cup sugar
1 egg
1 tsp. grated lemon rind
1 Tbsp. lemon juice
2-1/4 cups all-purpose flour
1 tsp. baking powder
1/4 cup fine graham cracker crumbs
Cheese Filling (recipe follows)

Cheese Filling:

Beat together until smooth 4 oz. cream cheese, 2 Tbsp. sugar, 1/2 tsp. grated lemon rind, 1 egg yolk and 1 Tbsp. half-and-half, milk or sour cream.

Preparation:

Cream butter, cream cheese and sugar until blended. Add egg, lemon rind and lemon juice. Mix well.

Combine flour and baking powder. Add to first mixture and blend well. Cover. Chill at leat 1 hour.

Shape dough into 1-inch balls. Roll in graham cracker crumbs. Arrange on ungreased baking sheets.

With finger make an indentation in center of each cookie. Fill with level 1/2 teaspoonful of filling.

Bake at 350 Degrees F. for about 20 minutes.
Remove to wire racks to cool. Store airtight.

Sure you can.. just bake it longer, check it after the regular time for baking.......... then check it every 2 minutes.......... I used to make them for my sons......... they made great pancake cookies, as they called them

I would probally spread the filling thinner then on a little cookie, might be really rich if you feeling like your eating more filling then cookie. I would spread out in bottom a pie tin, I do this with store bought choc chip dough ( when we have time by scratch, but you know how short our days are.) I let people decorate however they want. My glass pie plate just didnt brown enough so I LIGHTLY butter the fake tins I keep from those cheating days when I buy my pie crust.
I am going to file your recipe to try though thanks, my new BF loves cheese cake, I dont always have times so I look for short cuts, this will make quite an impression. Also selfishly I prefer cookies over cakes or pies, he loves cake.

I suggest cutting your recipe in half and then press it out onto a pizza pan or stone pizza. Bake as directed only check it half way. It may not take as long because you will be pressing it out instead of making drop cookies.

I'd keep it the same, but lower the temperature and extend the cooking time so you won't end up with a raw center.

id just keep it the same and just use the dough and press it out. it may not be exactly 10 inches. those cookies sound yummy!
