I love to go to High Teas and at those they serve cucumber sandwiches. I attended an English Afternoon High Tea class where they showed us how to make all the food. Those cucumbers were sprinkled with rice wine vinegar, allowed to sit for 15 minutes. Very very good. My mother still raves about those sandwiches.

I like red wine vinegar for my cucumber and sour cream salad. I use apple cider vinegar with sugar and water based cuc salads. I also sometimes use champagne vinegar if I'm looking for a less sour taste or balsamic for a sharper taste.

I use the Heinz Apple Vinegar. It's really cheap and kind of yellow in color (not the clear kind). It's great. Just the kind your Grandma used to use. Add a little sugar, salt & pepper. Also some onion slices into rings and lots of cucumbers.
