i need some that i can prep the night before & have them slow-cook for up to 11 hours.

gb beat me to it but the only other thing i would add would be the food network, ivillage.com and of course yahoo! there are some good crock recipes here and great boards for talking to others on ivillage and yahoo . They are all awesome.

probably best to do for all of yours on the lowest setting if cooking for 11 hours and frozen veggies would probably hold up better. You can buy frozen or by fresh clean and freeze in the portion sizes you will use

here is a recipe I got out of a slow cooker recipe book I ordered here,

Luk's Honey Teriyaki Pulled Pork Sandwiches


Ingredients
2 Tbsp. Garlic Garlic™
2 Tbsp. Onion Onion™
2 - 3 lb. boneless pork loin roast
1 cup water
1 1/2 cups Honey Teriyaki Sauce
6 - 8 slices pineapple (grilled optional)
Bountiful Beer Bread Mix®, prepared with Mountain Dew®

Directions
Place first 4 ingredients in slow cooker. Cover; cook on low for 7-8 hours or until roast is tender. Remove roast; discard water. Shred pork with fork; return to slow cooker. Add Honey Teriyaki Sauce; heat on low for 1 hour. Slice Bountiful Beer Bread; place 1/4 - 1/2 cup pork on slice. Top with slice of pineapple; drizzle with additional Honey Teriyaki Sauce. Makes 6-8 servings.
