Usually for beef steak, I find that 4 to 7 minutes is a good (medium rare to medium) on the george forman grill. Since you're NOT using a marinade, the tough crispy layer may not be that bad. If you're really worried, cook a test batch before your in-laws arrive. There's nothing worse than trying out a "new" recipe with "important" guest. Edit... "Winging it" is the way you learn. No matter how much advice you ask from people. You have 25 pounds of steak. I'm sure you can use 1 pound to practice.

I never thank no god for nuthin, and I have yet to thank George Foreman, so I will thank YOU! Make mine well done, with baby leaf lettuce, brown mustard and vine ripened tomatoes, on a whole wheat bun. MMMMMMMMM good!

It's not a cop out to say both, because GOD gave George the skills and personality. And George used his free will to make it happen. It's like that footprint poem, kind of thing.
