I made biscuits from the recipe on the Bisquick box except I flour and roll out my biscuits so I can use a cutter with them.

I put a little bacon grease or oil in my biscuit pan and dip on one side of biscuit and turn over on other side. Coating both sides with oil. Bake as directed.

I love white gravy. I put bacon grease r oil in my iron skillet when the oil gets hot I add flour to cover bottom. Stir until brown. Add milk to thickness you like. (remember when it get hotter it will get thicker). Salt and pepper to taste.

Biscuits and Sawmill Gravy

Makes 1 dozen biscuits

Ingredients:
For the Biscuits:

3 cups all-purpose flour
2 tablespoons sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable shortening
1 to 1 1/4 cups milk
1/4 cup melted unsalted butter

For the Sawmill Gravy:
1 pound ground sausage
4 slices thick-cut bacon
1/2 medium onion, diced
2 garlic cloves, minced
3 tablespoons all-purpose flour
1 teaspoon salt
2 teaspoons freshly ground black pepper
2 cups half-and-half
2 tablespoon unsalted butter

Make the biscuits:

1. Preheat the oven to 450°F (230°C).
2. In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Cut in the shortening with a fork until it looks like cornmeal. Add the milk, a little at a time, stirring constantly until well mixed.
3. Turn the dough out onto a lightly floured surface. Knead lightly two or three times. Roll out the dough with a floured rolling pin to 1/2-inch thickness. Cut dough rounds with a 2-inch cutter. Place the biscuits in a greased iron skillet. Brush the biscuits with half the melted butter. Bake for 12 to 14 minutes, or until golden brown. Brush the hot biscuits with the remaining butter. Split the biscuits in half and ladle Sawmill Gravy over the hot biscuits.

Make the Sawmill Gravy:
1. In a large skillet, combine the sausage, bacon, onion, and garlic. Cook over medium heat until the sausage is browned and crumbles. Stir in the flour, salt, and pepper; cook for 1 minute, stirring constantly. Gradually stir in the half-and-half. Cook over medium heat, stirring constantly, until the mixture is thickened. Stir in the butter until well blended.

Sausage Gravy and Biscuits

INGREDIENTS:
3 cups milk
6 tablespoons all-purpose flour
salt and pepper, to taste
8 ounces breakfast sausage, regular or spicy
2 3/4 cups biscuit mix
3/4 cup milk
PREPARATION:
Whisk together the 3 cups milk, flour, and salt and pepper, until flour is dissolved. Pour into a skillet. Simmer, stirring constantly, for 15 minutes. Brown sausage in separate skillet, stirring and breaking up until cooked through; drain.

Stir sausage into gravy.

Mix biscuit mix with remaining 3/4 cup milk in bowl until soft dough forms. Drop by spoonfuls onto ungreased baking sheet. Bake at 450° for 10 minutes, or until nicely browned. Ladle hot sausage gravy over split biscuits.
Enough for 10 servings

Sourdough Biscuits
David Herzog

½ cup sourdough starter
1 cup milk
2 ½ cups unsifted flour, divided
¾ tsp. kosher salt
1 Tbs. sugar
1 tsp. baking powder
½ tsp. baking soda
Bacon fat, Crisco, or butter

In a large bowl, mix starter, milk and 1 cup flour together. Cover and let rest in a warm draft free place for at least 2 hours. Sift together remaining flour, salt, sugar, baking powder and soda, sift on top of liquid mixture. Work into dough, kneading 4 to 6 times on a floured board. Pat out to ½” thick and cut out biscuits using a small can or biscuit cutter. You can also just pinch off dough and roll into balls. Dip each biscuit into melted fat of your choice. Place biscuits close together in a 10” (preferred) or 12” Dutch oven, cover and let rise for 1 to 1 ½ hours. Bake at 375° for about 25 minutes. Serves 4 to 6


Dave’s Country Sausage Gravy

1lb. Jimmy Dean sausage
4 slices bacon
½ small onion, diced
2 c. water
2 c. milk
½ tsp. black pepper
¼ tsp. granulated garlic
4 Tbs. flour

Brown sausage, bacon, and onion in a 10” Dutch oven. Do not drain the grease from the meat, it seasons the gravy. Add flour to the meat mixture, stir well. Add remaining ingredients stir well and bring to a heavy simmer but, not boiling. Add a little more
flour for a thicker gravy if desired. Serve over biscuits, potatoes, etc.
Makes about 10, ½ cup servings
