Does anyone have a simple chicken recipe to go with red beans and rice? I really want to make red beans and rice tonight but the only meat I have pulled out of the freezer is chicken! anyone have any ideas?

Cut the chicken into small cubes or strips and put it in a pan with a little olive oil or canola oil and brown the chicken. You'll have to keep stirring and turning it. Leave it there until all the pieces have cooked clear through. Then either put it on top of your red beans and rice or stir it into the red beans and rice. Good stuff. Try it with sausage sometime, too.

oh, that's a toughy. i've always had red beans & rice with cut up polish sausage. hmmm, i guess you could fry the chicken, make corn bread, and have the red beans & rice as a side dish rather than a main course. you could also just sub the sausage for chicken and do the recipe the same way.

If you have a gril, gril the chicken and then serve it with your Red Beans and Rice. I had Red Beans and rice over the weekend. It was delicous.

Take the chicken and slice it up in to strips. Place them in a skillet and cook until browned. Once done, place in rice mixture about half way through cookin time and voila! Bon appetite!

In reality, the beans are your protein. You don't 'need' chicken.

But, you could saute some chicken on top of the stove with whatever salad dressing you have on hand. Italian is especially good, but even ranch would work.

Cajun Chicken Wings
1 (5 lb) bag chicken wings
1 tablespoon cayenne
2 tablespoons paprika
2 tablespoons garlic powder
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon onion powder
1 tablespoon salt
1/2 teaspoon white pepper
1/2 teaspoon fresh ground black pepper
1/4 cup vegetable oil
Rinse chicken and pat dry. In food processor or blender, combine all remaining ingredients, EXCEPT oil. Process until well blended. With machine on, slowly pour in oil and process until a thick paste forms. In a large bowl, combine wings and paste. Toss until wings are well coated. Cover and refrigerate over night. Broil or grill wings until nicely browned outside and cooked through.
