I have a bet in that my coworker cannot eat 12 kung pao (12000 Scoville units) in 4 minutes w/o getting sick or seriously messing up his gastointestinal system.

just burning your mouth is bad enough. in time it'll wear off though.

People can eat food that's a LOT hotter then that without a problem. The problem with that though is that their system is acclimated to the chemicals. For someone that isn't used to the burn, they may think it's the end of the world but once it's in, it's in, and there shouldn't be a problem as long as you don't have any ulcers or any bleeding in the rest of the digestive system. The only problems with hot food is that your mouth is on fire for a while and when you have to go to the restroom. I've eaten 3 habanero peppers (200,000-300,000 units each) at once and washed it down with whole milk and bread to soak up the heat. If he needs relief from the heat, give him some bread and milk while laughing at him.

Personally, I think you're going to lose that bet.

A side note about messing up the gastrointestinal system... the reason why I ate the habanero peppers was because I had something, probably a bacteria, that was making me gas up big time and it was painful to the point that I wasn't drinking water and getting dehydrated. After a dozen habanero peppers over 2 days, the problem was gone because the burning chemical in the peppers burned everything including the bacteria. It's why mexicans, by and large, don't get ulcers caused by bacteria and virii.

If his system is USED to really hot peppers, he should be OK...(my late husband could eat more hot stuff than anyone I have ever seen...he could eat RAW Scotch Bonnet peppers!)...
If your co-worker is not used to REALLY hot peppers, it could seriously affect his health...he could suffer an allergic reaction, bleeding of the throat, esophagus and stomach (from the Capsasin in the peppers)...severe diarrhea, and on and on...
If your co-worker is not used to eating these...PLEASE find some other way to settle your bet...risking someone's health is NOT worth it....

Eat a lot of peppers and you better leave extra bathroom time in the morning.

He may be able to do it, but I don't envy the after affects the day after.... you know what they say, sometimes good going in, isn't good coming out...
