Thanks to all of you that answered my question but I guess I should have specified that I was looking for a plain spaghetti sauce recipe or I guess I'm looking for a meatless spaghetti sauce. Does anyone know a good recipe for a basic plain (meatless) spaghetti sauce that makes tons left-over that I could possibly freeze for when needed later on?

Marinara:

1 28 oz can Tomato Sauce
1 15 oz can diced tomatoes
1/2 cup good olive oli
1 yellow onion, diced
3 cloves garlic, minced
1/2 cup chopped fresh basil
3 T dried Italian herbs
1/2 cup diced carrot
1/2 cup diced celery
1/2 cup grated parmesan cheese
1 T kosher salt
1/2 teaspoon fresh ground pepper
1/2 tsp. red pepper flakes
1/2 cup good red wine
1 tsp brown sugar

Saute onion, garlic, carrot and celery in 1/4 cup olive oil until translucent. Add tomato sauce and diced tomatos. Add herbs. Add remaining ingrediants and let simmer for one hour. Adjust seasonings to taste.

Marinara Sauce
1/4 cup of olive oil
4 cloves of garlic sliced in half
1 35oz can of imported Italian tomatoes
3 basil leaves, washed, patted dry and chopped
1/2 teaspoon of oregano
salt & pepper to taste

1. Place garlic and olive oil in large sauce pan.
2. Turn heat to medium and cook until garlic is soft and lightly browned.
3. Crush the tomatoes and add with their juices.
4. Fill empty tomato can 1/4 of the way with water and pour in with tomatoes
5. Add basil, oregano, salt and pepper.
6. Bring to a boil, then lower heat to a simmer and cook until thickened approximately 20 to 30 minutes.

I use a combination tomato paste and sauce until it is the thickness I like. I add lots of sauteed onions, mushrooms regular and portabello,bell peppers for color and garlic some Italian spices and butter.It cooks up real nice and top with parsley and cheese.

I make a tomato sauce out of tomato soup, I use milk (not instead of water, you heat it and add onions mushrooms and seasoning (I found regular italian seasoning works well) Boil it down a bit so it thickens. You can use multiple cans of tomato soup if you need to make more.

Find one you like, put in what you do like for onions, mushrooms, etc and the herbs you like in spag sauce and leave out the meat.

take the recipies that you got and ummmm delete the meat...just dont put it in there. or just buy ragu
