Hi,
My favorite way to eat eggs is when they are incorporated into a dessert recipe, such as brownies. Many might not agree, probably looking for scrambled or something like that, which I do like, but eggs in recipes are my all time favorite.

I love omelets with potatoes, onions and ham. I usually eat scrambled eggs with ketchup! I don't know why, but I like it. Eggs cooked over easy are favorites too.

Get a toasted English muffin, put a quarter inch thick slice of ham on it, put a fried egg over that and then pour some holindais sauce over it. Yummie. It's called eggs benedict but ya probably already know that.

I like them over easy or scrambled but since my diet I eat the 3 egg white and 1 egg yolk low fat ham and cheese omelet. It's tasty and you can add mushrooms to make it taste better.

You don't really cook anything ON eggs.

Personally, I like carbonara:
8 eggs
salt
fresh ground black pepper
1/2 cup freshly grated parmigiano-reggiano cheese
1/4 cup milk
1/2 lb pancetta or thickly sliced bacon , sliced crosswise into 1/4 inch strips
1 clove garlic, minced, optional
1 red bell pepper, diced
1 cup fresh Italian parsley, stems discarded before measuring

In a bowl, beat eggs, salt, black pepper, cheese, and milk. Set aside.

Cook pancetta in a saute pan over medium-high heat, stirring occasionally until it is done like crisp pieces of bacon. Drain off excess fat (but leave about 2 tablespoons in the pan).

Add garlic and bell pepper to the pan and cook over medium-high heat for 2 to 3 minutes, or until garlic shows the first sign of turning golden. Add Italian parsley. Stir for 1 more minute. Reduce heat to medium, add egg mixture to pan, and stir until eggs are cooked to your liking. Serve immediately on warmed plates.

Scrambled egg with strong cheddar is also a fav of mine, as are pickled eggs!
