If you like grilled cheese sandwiches and tomato soup Rachael Ray has a really easy homemade soup recipe on her website it is from the 1950's I think she called it the 1950 easy homemade tomato soup recipe. It was on the food network website. Check it out, you can also make tomato sauce. Or chop them up take out the seeds and make a big pot of rigatoni and drain add some garlic and some pasta water and some goat cheese and mix that all up together another one of Rachael Ray's quick menu's.

Put some cut up chicken in a wok, stir fry it, add curry and tomatoes and simmer and you will have a nice indian-inspired dish. Serve with rice.
Also, you can cut up tomatoes and add mint and a bit of olive oil. Delish!
Fry up some of the large portobello mushrooms in olive oil, place a mixture of diced tomato, garlic and basil on them with mozzerella on top and place in oven for about 10-15 min. Makes little portabello pizzas.
Dice and mix into mashed avocado. Add a bit of garlic and lemon juice for guacamole.

I make tomato salad. I use 8 to 10 tomatoes, with 1 small onion. Boil 6 eggs or so. slice tomatoes thin, along with onions and eggs. I use half a cup of vinegar and half a cup of vegetable oil. season with salt and pepper. let chill for 6 hours and enjoy. My German grandmother ALWAYS made this. to me its comfort food. of course you can change the oil and vinegar measurements to your taste.

i like to take fresh tomatoes like that and put into a baking deep baking dish cover with minced garlic and herbs to your flavor i like parsley and a some diced onion then I cover the whole mess--oh you need to either cut the tomatoes in half or quarter them depending on the size--cover them with Parmesan cheese and I like to use a pizza cheese blend of mozzarella and other cheeses sprinkle black pepper on top and bake at 400 degrees till cheese is nice an bubbly. My mom makes it like this to but she but hard toasted thick bread on the bottom of dish before the tomatoes but my kids dont like the texture of the toast so I serve mine over noodles with a bit of olive oil. You can bake up a huge batch like this them freeze it when it is cooled. My husband does not eat tomatoes chunky or other wise but he likes this dish. I even sometimes put a bit of seasoned cooked hamburger meat in before I top it with cheese. good eatin!!

meditteranean spaghetti. cut up those tomatoes and put them in a good nonstick frying pan with some extra virgin olive oil, some olives and capers, and a little bit of parsely. boil some spaghetti noodles and simmer all the above in a pan on the stove, then pour over the noodles and top with fresh grated parmesan. yummmmmm!!!!!!!!!!!!!!!!

Here in Louisiana, when we have an abundance of tomatoess we make tomatoe sandwiches. A little mayo, mustard, salt, pepper, & tomatoes. It's very good. Good luck. 2D
