I want to make my boyfriend a really good chicken dinner. The thing is he is really really picky about what he eats. I'm not a great cook and the only chicken meal I can make is chicken and rice. Not a big deal and he doesn't want to eat that all of the time. Any simple yet good ideas? And please tell me how to cook it because I don't usually cook and have no idea what to do and for how long. thanks!

get some chicken breasts boneless and skinless..and put them into a plastic bag. get a big pot or frying pan and pound the meat until its flat or about the same size

next get some swiss cheese or provalone and place it on the flattened chicken breast. Take 2 pieces of canadian bacon or really good ham and put it on top of the cheese. Take one end of the chicken and start to roll it like you would a cigar. get two or more toothpicks and close the chicken breast into a bundle. do the same with the other chicken breast.

Next mix one egg salt and some pepper in a bowl like you would scramble an egg. Get some bread crumbs can be italian seasoned or regular bread crumbs and put those on a plate.

Dip the raw rolled up chicken into the egg mixture then into the bread crumb mixture and place on a greased (either sprayed with pam or oil )baking sheet do the same to the other chicken breast.

Bake in the oven at 350 degrees for approximately 20-25 min..the chicken is done when you cut into it and the juices coming out are clear.

Here is a real good chicken receipe. Sweet and spicy.

What to buy:

Boneless chicken breast
mushrooms
jalapenos or if you like it real spicy use habanero
red bell peppers
red sweet wine
1 can of chicken stock
honey
salt and pepper
canyenne peppers (optional)

In a frying pan brown the chicken on both sides. (med-high heat) You may want to add a little olive oil. Remove chicken and set it aside. Sautee the bell peppers and mushrooms for about 2 minutes on medium heat.

Add about 2 cups of wine and 1 can of chicken stock.
Add Salt/Pepper
canyenne peppers (if you want that extra kick of spice)
Bring to a boil. Than add chicken and hot peppers
Reduce heat to medium and simmer for about 40 min
The last 10 minutes add a teaspoon of honey.
Remove from burner and let sit for about 5 min.
You can make it with rice and veggies.

It tastes really good the day after...

One of my favorites.

Chicken Catchatori

Chicken - I usually use 4 thighs
3 cloves of garlic, minced
1 large bell pepper, cut into 1" cubes
1 medium onion, sliced
1/2 pound of mushrooms, sliced
1 can whole tomatoes
1 can tomatoe sauce
1/4 cup red wine
oil
Salt, pepper, oregano, Thyme to taste

Put enough oil in a Dutch Oven or large skillet
Brown the chicken about 5 min per side. Remove and set aside.
Saute garlic, pepper, onion and mushrooms until tender, Maybe 5 min.
Add tomatoes, tomatoe sauce, wine and spices.
Return Chicken, cover and simmer over medium heat for 30 min.
Serve over pasta or rice with some french bread.

Stove Top Easy Chicken Bake

I pkg Stove top stuffing mix for chicken
1 1/2 lb boneless skinless chicken breast, cut into 1 inch pieces
1 can condensed cream of chicken soup
1/3 cup Sour cream
1 bag (16 oz) frozen mixed veggies, thawed and drained

Preheat oven to 400 degrees
prepare stuffin mix according to package
Mix chicken, sour cream, soup, and veggies and place into a 13 by 9 inch pan and top with the stuffing

Bake for 30 minutes or until chicken is cooked through

Ingredients:
4 boneless, skinless Chicken breast halves
2 Eggs, beaten
1 cup Italian Bread Crumbs
1/4 cup Olive Oil
1 jar Spagetti Sauce (15-1/2 oz.)
1/2 cup grated Parmesian Cheese 1 cup (4 oz.) shredded Mozzarella Cheese
Method
Preheat oven to 400. Dip chicken into eggs and into bread crumbs. Heat olive oil. Cook chicken in oil until well browned on both sides. Pour spaghetti sauce into 11x7" baking dish. Place chicken on sauce and top with cheeses. Bake 15 minutes or until cheese is melted and lightly browned.

Notes: If you have extra time, you might flatten the chicken breast before preparing.

Tandoori-style chicken

Ingredients
1.25kg/2½lb chicken pieces (legs and/or breasts) skinned
1 tsp salt
3 tbsp lemon juice
For the marinade:
450ml/¾pt plain yoghurt
½ onion, coarsely chopped
1 garlic clove, chopped
2.5cm/1in piece fresh root ginger, chopped
1-2 hot green chillies, roughly sliced
2 tsp garam masala
lime or lemon wedges, to serve



Method
1. Cut each chicken leg into two pieces and each breast into four pieces. Make two deep slits crossways on the meaty parts of each leg and breast piece. The slits should not start at an edge and should be deep enough to reach the bone. Spread the chicken pieces out on two large platters. Sprinkle one side with half the salt and half the lemon juice and rub them in. Turn the pieces over and repeat on the second side. Set aside for 20 minutes.
2. Meanwhile, make the marinade: combine the yoghurt, onion, garlic, ginger, chillies and garam masala in a blender or food processor and blend until smooth. Strain the paste through a coarse sieve into a large bowl, pushing through as much liquid as you can.
3. Put the chicken and all its accumulated juices into the bowl with the marinade. Rub the marinade into the slits in the meat, then cover and refrigerate for 8-24 hours. Preheat the oven to its maximum temperature and set a shelf in the top third of the oven where it is hottest. Remove the chicken pieces from the marinade and spread them out in a single layer on a large, shallow, baking tray. Bake for 20-25 minutes, until cooked through. Lift the chicken pieces out of their juices and serve with lemon or lime wedges.

Chicken Cordon Bleu

INGREDIENTS
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
1/2 cup seasoned bread crumbs


Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
Pound chicken breasts to 1/4 inch thickness.
Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

chicken curry
for that you need chicken, it don't matter if its legs, breast
1. chicken- 1 pound
2. onions- 1 cup chop
3. plaint yogurt- 2 cups
4. salt & pepper- by your taste
5. curry powder- 2 tea spoon
6. oil - 3 spoon
7. tomatoes- 2 chop
8. water- 1/2 cup
add oil in to your pan on high heat, then add chop onions cook it until its golden, then add chicken keep cook it for 7-8 minutes & add the yogurt,cook it again for 2 minutes then add the tomatoes & salt & peppers & curry powder, & after few minutes add water & leave it for 10 minutes, be sure not to burn it

Something easy is put on some BBQ and throw it in the oven. Fry it in some Olive oil. add seasonings. Bread it fried chicken. Sides can be rice, pasta, potato, veggy. They make marinate packets to you can use the night before to have something more flavorful.
