Boil your chicken in water seasoned with a little bit of onion powder and garlic powder. If it is chicken on the bone (which tastes better) then you need do "filter" the broth after you've boiled the chicken. I usually use a medium sized collander and a paper towel: place collander in bowl large enough to hold all your broth, place a layer of paper towels in the collander. Slowly and CAREFULLY pour the chicken and broth into the collander. pull the collander out of the bowl making sure to push all the broth through into the bowl. Pour broth back into your pot. Bring broth back to a boil and add your frexh broccoli florets. Pull the chicken off the bone and cube it. After about 4 minutes of boiling the broccoli, add your diced carrots and wide egg noodles and chicken, then another 2 minutes and add your celery. Season to taste with salt and pepper. Cook until noodles and vegetables are tender. If you don't have enough broth, add more water and chicken buillion cubes (1 cube per cup of water), but be careful, bullion is salty. Also, if you'd like the soup to be thicker, you can add a roux or cornstarch. Mix the cornstarch with cold water, THEN add to the soup.

I know this sounds like a whole lot, but it is actually quick and easy. Rice can be substituted for the noodles as well.

To make a simple chicken noodle soup:
Cook the noodles according to the package directions.
Steam the broccoli and carrots and together for no more then 10 minutes (you don't want them mushy).
Cut boneless, skinless chicken breast into nugget size pieces. Start off with a frying pan and add 1-2 tablespoons of good olive oil. Add the celery and chicken pieces to the pan and cook for at least 10 minutes. Add a cup, or so, of some chicken stock (broth) to the pan to bring up the browned pieces on the bottom of the pan (your flavor). Transfer the chicken, celery and stock into a larger pot and add some more chicken stock (enough to create the "soup" - you can dilute with water) and add the vegetables and noodles and simmer all together for at least 10 minutes.
Soups on.

I make a chicken noodle soup that is so easy and my husband loves it.

Cook some chicken and when done cut it up into bite size pieces. Put the chicken back in the water you cooked it in. Add some chicken boullion cubes and a bag of egg noodles. I usually add in a little black pepper and some parsley. Cook until the noodles are done.

Hope she feels better soon.

Start your soup by adding chicken broth from a can
add equal amount of water from there the possibility's are endless. home made soup is good but a good old can of Campbell's chicken noodle soup will perk her up. For an all together satisfying but different taste try Campbell's Double noodle.

The best chicken soup is made from scratch, but as a guy wanting to cook for his girl, I will give you a short-cut. Buy some boneless chicken thigh meat. If you cannot get boneless, then cut off the raw meat. The thigh meat will give your soup MUCH better flavor than breast, trust me.

Cook about half a pound of egg noodles according to package directions plus a tablespoon of vegetable oil in the water to keep them from sticking, drain and set aside.

You will need to chop your carrots first in thin slices and put in a pan, cover with water and start them boiling because they take longer to cook.

Meanwhile,Cut your chicken in one inch pieces.Saute in a pan with a little vegetable oil, for about ten minutes on medium heat. Place in a pot with a large can of chicken broth.and two cups water. Swansons is the best. Put in a small onion, chopped fine. And a stalk of celery, chopped fine. Drain your carrots and add to the pot. Let this boil for about 15 minutes. Add chopped brocolli and let this continue to boil for another 15 minutes.. Add your noodles, plus salt and pepper to taste. You do need the onion for flavor, trust me.

boil the chicken, carrots and celery together. (put in pot and cover with water). season with salt and pepper and/or an all-purpose seasoning like emeril's essence, cook about 20 minutes til done. take chicken out of broth and pull meat from bone. put chopped broccoli and noodles in broth and add chicken meat back and cook about another 10 minutes. check and re-season if needed and make sure veggies are done.

Chicken Soup

INGREDIENTS:
Stock
1 chicken, about 3 1/2 pounds
8 cups chicken broth
few sprigs rosemary, or about 1 teaspoon dried
few sprigs thyme, or about 1 teaspoon dried
1 clove garlic, sliced
1 carrot, cut in chunks
2 ribs celery, cut in chunks, with leaves
1 small onion, coarsely chopped
1/4 teaspoon coarsely ground pepper
-
Soup
1/4 cup butter
2 shallots, minced
1 carrot, diced
2 ribs celery, diced
6 green onions, with green, thinly sliced
6 tablespoons flour
6 cups reserved chicken broth
1 cup frozen peas
2 to 3 cups diced chicken breast
1 cup heavy cream
salt and pepper, to taste
PREPARATION:
In a large stockpot, combine chicken with the broth, sprigs of rosemary and thyme (or dried), garlic, carrot chunks, celery chunks, and coarsely chopped onion and coarsely ground black pepper. Bring to a boil.
Reduce heat to medium-low, cover, and simmer for about 1 hour. Strain broth into a bowl; cover and refrigerate. Put chicken in a bowl; cover and refrigerate.
When broth has cooled, skim excess fat off the top. Measure 6 cups into a separate bowl; set aside. Dice chicken breast and transfer about 2 1/2 to 3 cups to a bowl. Cover and refrigerate. Refrigerate remaining chicken for another use, such as a casserole or chicken salad for sandwiches.

In a large saucepan or the same stockpot, cleaned, melt 1/4 cup butter over medium-low heat. Add minced shallot, diced celery, and diced carrot. Sauté for about 6 minutes. Add green onion and sauté for 1 minute longer. Stir in flour until well blended. Add the 6 cups reserved chicken broth. Cook, stirring frequently, until vegetables are just tender, about 10 minutes. Add peas and chicken; continue cooking for about 5 minutes longer. Stir in the heavy cream. Taste and add salt and pepper, as needed. Serves 8.

Just mix all that stuff in a pot of boiling water and a flavored bullion cube...or you could just go buy a can of chicken noodle soup
