How do I know when an avocado is ripe enough to smash and make into a spread? The one I have I got yesterday and is sort of soft but not extremly soft. Like you can press on it a little and make like a dent of sort.

I'm sorry but you can't make avocados ripe. they have to ripen by themselves... it is nature. All you can do is buy more avocados but get some that are already ripe. one way to find out is gently press the skin, if it feels firm, it is unripe. If it feels soft, it is ripe.

It is ripe good to use in the next day or 2. When it is extremely soft usually it has already started ot go bad.

The Avocado your describing is probably plenty ready for mashing. Try a little Guacamole.

Recipe 1

Avocado prawn in wasabi dressing

Dressing
2 tsp wasabi paste
4 tbsp olive oil
2 tbsp lime juice, plus 6 wedges, to serve
1 tsp clear honey

Salad
2 large ripe, but firm avocados
250g pack chilled large peeled prawns
2 heads of chicory, red if possible, separated into leaves
few sprigs of watercress
prawn crackers, to serve

Recipe 2

California Avocado Omelette

Ingredients

1 medium California avocado, ripe but on the firm side
6 large eggs, slightly beaten with 1/2 cup milk
½ Cup grated monterey jack cheese
½ Cup diced scallions
½ Cup seeded, diced fresh tomato
salt & pepper to taste
Pam cooking spray

Instructions

Spray frying pan with Pam cooking spray.
Over low heat quickly saute scallions.
Pour beaten eggs into pan.
Cover for 3 minutes over low heat.
Flip egg over and layer cooked side with avocado, cheese and tomato.
Cover again for 3 minutes or until cheese melts.
Fold omelette onto itself and season with salt & pepper.
