Okay, is this a meal or snack? If you are serving as a meal start with 4 oz uncooked per serving. You can reduce it down to two if it is a snack and a smaller portion. So for a meal you need about 7.5 pounds and I would round up to at least 8. For a snack you will need 3.75 bit I would round up to 5. Then you should count on at least 1 oz per serving but if they are serving themselves the cheese you might want to go up. Teenagers always add a lot.

When we make for a large crowd we buy the large cans of chili (industrial size!) as well as the large cans of nacho cheese sauce. We line crock pots with turkey bags (so they don't get coated with hard to clean stuck on food!) and heat the chili and cheese in the crock pots. Then we serve the nachos in the little paper boats. Chips, chili and cheese. Not gourmet but then you have 75 teenagers, mostly boys, it is easy and they are thrilled to have FOOD!

To cut down on cost, use re fried beans instead of meat. 3-4 lbs. of cheese should be plenty. It is just sprinkled on top. If you give them the chips covered with beans then let them finish it, you can regulate how much is given out. Use olives, sour cream, salsa, guacamole, and other fun toppings. Sounds good to me. Enjoy!

Probably around 7-8 lbs of meat and cheese. ('m thinking 1lb of meat for every 4 people.)

I'd head to your local wholesale club.
