Basic Thai Sweet Chili Sauce

1 servings 15 min 5 min prep

1/2 cup sugar
3/4 cup rice or white wine vinegar
1 teaspoon salt
4 small red chilies, chopped

Heat sugar and vinegar in a saucepan until sugar dissolves.
Boil the mixture until it starts to thicken.
Remove from heat and stir in salt and chili.
Allow to cool before serving.

Here's the recipe for Chili Sauce that we've made for years.

3 quarts peeled tomatoes - rough cut
3 large onions - chopped
4 green peppers - chopped
2 red peppers - chopped
1 cup brown sugar
1 Tbs. salt
2 cups vinegar
1 Tbs. all spice
1 Tbs. whole cloves
2 cinnamon sticks

Put all spice, cloves and cinnamon stick in cheesecloth so you can remove it later.

Bring all ingredients to a boil, then turn to simmer. Cook for a few hours. When thickened, can accordingly.

I do mine in an electric roaster and increase the recipe about 3 times. As long as I'm going to make it, I want enough to last all year!
