my mom makes this potato salad, and it's my favorite... but she won't tell me the recipe. I've watched it being made, but had to leave while she was making it... I know these are the ingredients, but need to complete this recipe by figuring out the amount of salt needed, and the amount of vinegar...and there seems to be an ingredient missing but i could be wrong.

7-8 potatoes (boiled with skin on, peeled then chopped)
2 carrots shredded
4 celery sticks (of equal length to carrots)
½ large vidalia onion
1 green bell pepper
1 cup kraft mayo (maybe a little extra)

vinegar - need amount
Salt - need amount
Missing ingredient?

There might not been any fixed amount, try a dash of each, mix and taste. Keep adding until you are happy. I make chicken salad using a similar recipe and never measure.

Remember, it is easier to add than remove. Add only a little at a time. And remember that the vinegar will mellow over time, so if you plan to eat it the next day you might want to retaste and readjust before serving.

Start with a tablespoon of vinegar and a 1/8 tsp of salt. Mix the mayo with the vinegar, salt and a dash of sugar... and taste it. If you like the amount of vinegar, mix it in! The salad will taste better if you add the may mix to the potatoes while they are warm.

Seems Libbyami and I make the same receipe!! :)

try adding 1 tbsp milk and 2tbs vinegar to the mayo. add the milk first and stir well, otherwise the vinegar will curdle the milk. add 1 teaspoon salt, and 1 teaspoon sugar. milk and sugar are probably your missing ingredients. taste the mixture. you can always adjust the vinegar, salt and sugar if you need to. raspberries to your mom for not telling !! :-)

It sounds like it's missing a little sugar and mustard. Try:

1 1/4 cup mayonnaise
1 Tablespoon good mustard (Grey Poupon is my favorite)
1 Tablespoon white vinegar
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper

salt and vinigar to taste, i like a lot but for sutving porpose i add just enought to inhance but not domimate.
missing ingrediant? Onion and or garlic.
i have had p saled with relish and musterd used too...it is all good.

Where I come from we use boiled eggs, and sweet pickles in potato salad maybe you could try it...Hope I helped.

I would put MUSTARD in as the missing ingredient........no problems !!! DELISH !!
