It is a popular symbol that has a lot of room for variations (skinny ones, fat ones, double and triple ones). It is easy to understand in any language and lets the machine display mixes of all those patterns or display a pattern with a special wild card symbol (triple win for example).
That flexibility makes even the people who get the lowest single bar feel that they are on the path to winning and keeps them glued to their seats dreaming that the next bar will be part of an all-reel triple bars with wild cards. Not much chance but it makes a great dream to look forward to.
