Here are some of my favorites:
Beer Batter Onion Rings
1 scant cup all purpose flour plus extra for dusting
1 cup beer
2 Vidalia onions, peeled and cut crosswise 1/3-inch thick and separated into rings
Vegetable oil for deep frying
Put the flour into a bowl and make a well in the center. Pour the beer into the well and whisk until the mixture is just combined. Strain the batter through a sieve into a clean bowl and let it rest, covered, for 1 hour.
Dust the onion rings with the additional flour, shaking off the excess, and coat them with the batter. Working in batches, fry the onion rings in 2 inches of preheated 370 degrees, oil until they are golden. Transfer them with a slotted spoon to paper towels to drain and sprinkle them with salt to taste.

Spicy Onion Rings
2 large yellow onions (Spanish)
Salt
Cayenne
1 12-ounce can beer
1 cup of flour, sifted
Tabasco
Oil
Slice off ends of onions and peel off the skins. Slice into 1/2-inch rings. Place rings in a bowl of ice water and let sit. In separate bowl whisk together beer and flour. Season with salt, cayenne, and a dash of Tabasco. Whisk together. Dry onion rings on paper towels then dip into batter. Heat oil in a large kettle to 375 degrees. Dip dried onion rings in batter. Fry onion rings until brown and crispy. Serve

The Absolute Best Fried Vidalia Onion Rings
Several large Vidalia onions
1 cup all-purpose flour
1 teaspoon salt
1 1/2 teaspoons baking powder
1 egg, separated
3/4 cup milk
1 tablespoon vegetable oil
Peanut oil, for deep-frying
Slice onions into rings. In 1 bowl, mix together flour, salt and baking powder. In another bowl, beat egg yolk, then stir in milk and vegetable oil. Combine wet and dry ingredients, stir until smooth. In a third bowl, beat egg white until soft peaks form, then fold into egg-flour mixture, stirring until smooth. Dip onion rings into batter and deep fry.

BATTER FOR ONION RINGS
1 c. flour
1/2 tsp. salt
1 egg, beaten
1 c. milk
2 tbsp. oil
Fat or oil, for deep frying
Combine above ingredients and beat until lumps are gone. Coat onion rings with batter. Fry, a few at a time, in hot fat - stirring to separate - until golden.
Drain on paper toweling. Sprinkle with salt. Fat should be 360 degrees for frying.

ONION RING BATTER
1 c. Wondra flour
1/2 c. corn meal
2 eggs
Salt & pepper to taste
Ginger ale
Beat eggs slightly. Add flour, meal, salt and pepper; stir well. Add ginger ale to make batter thickness desired. Dip onion rings and fry in deep fat at 350 degrees until brown.

1 cup all purpose flour
1 cup beer / soda water
salt
pepper
Mix all together and let stand for 5 minutes before use. It also helps if you first put the cut onions in a bowl of ice water, drain, toss in flour, place in batter and then deepfry.

Try using a boxed fish batter. Very easy, and add extra spices if you like.
