I use Fry-light...

cut them into wedges, then spray them, until they are completely covered. sprinkle with salt and a bit of cajun...cook on a high heat in the over until they go brown, and the skins crispy...

You can buy fry light from any supermarket...they go great like this with homemade chilli or lasagne...bootiful!!

The healthiest way to cook them is to bake them for an hour at 450 degrees. (Pierce them with a sharp knife first to release any steam that builds up during baking.) The high heat caramelizes the sugars and makes the potatoes gooey and sweet. (If you boil them you lose a lot of the vitamins as they leach into the cooking water.)

If you prefer mashed sweet potatoes you can bake them first, then remove the flesh and mash it with a little nutmeg and butter. Yum~Yum~Yum!

Sweet Potato Casserole

Prep: 45 minutes
Bake: 25 minutes

Ingredients:

1-1/2 pounds sweet potatoes
1/2 cup granulated sugar
1/2 cup milk
1 beaten egg
3 tablespoons butter, cubed
1 teaspoon vanilla
1/2 cup packed brown sugar
1/3 cup all-purpose flour
2 tablespoons butter
1/2 cup pecan pieces
Pecan halves (optional)

Directions

1. Scrub and peel sweet potatoes. Cut off and discard woody portions and ends. Cut potatoes into cubes. Cook, covered, in a small amount of boiling water for 25 to 35 minutes or until tender. Drain.

2. Combine hot sweet potatoes, granulated sugar, milk, egg, the 3 tablespoons butter, and vanilla. With a wooden spoon, stir to break up potatoes but not completely mash them. Put mixture into a greased 2-quart square baking dish. Combine brown sugar and flour; cut in the 2 tablespoons butter until mixture resembles coarse crumbs. Stir in pecan pieces and sprinkle crumb mixture on top of potatoes. Bake, uncovered, in a 350 degree F oven about 25 minutes or until set. Garnish with pecan halves, if desired. Makes 8 side-dish servings.

Grilled Sweet Potatoes

It doesn't take a lot to make delicious sweet potatoes. The secret is to avoid boiling them. These grilled sweet potato slices cook up nice and fast and most of the preparation can be done in advance.

INGREDIENTS:

4 medium sweet potatoes
1/2 cup melted butter
3 tablespoons brown sugar
1 teaspoon ground cinnamon

PREPARATION:

Cup sweet potatoes into 3/4 inch slices. Bring 3 quarts of water to a boil and add potatoes. Simmer until potatoes are just starting to soften. Cool and peal. Combine butter, brown sugar and cinnamon, brush over potatoes. Place Potato slices on preheated grill and cook, turning once until potatoes begin to brown.

Very tasty and healthy:

Cut sweet potato into 8 wedges
Sprinkle with olive oil, little salt, and paprika/cayenne pepper
Toss to coat
Set oven to 425
Bake in single layer on baking sheet for 15 min.
Turn over and bake for 10 min. more.

Bake them just like a baked potato but just a few minutes longer. Then you can sprinkle cinimon on them.

You can also put butter and brown sugar but that is not as healty.

Or you can also peal them and make mashed sweet potatoes

I love them; and they are SO healty. Enjoy

I make an Orange Glaze and bake them sliced in half with a pat of butter on each for an hour at 350.

Sautee them in a tiny little bit of oil. Add red onion, fresh tomatoes and dried apricots. Also add a bit of garlic, some chilli (if you like it), some cinnamon and some cumin.

A really good (pretty healthy), very quick moroccan-inspired dish!

baking is my favorite method / 350 degree oven till soft to squeeze.
as far as healthy goes ,its like with any vegetable. what are you going to put on it?thats where people get into trouble is all the stuff they dress it up with,so try to keep it simple.
we like butter, salt and pepper .

The healthest way is to steam them or baked. My favorite is sweet potato casserole. YUM YUM

I mash n whip them but I add a gulg of cream n dollop o butter with a good dash of mixed spice, ok not very healthy but bloody good!
