I like mine medium to rare, in fact so rare that a good vet could bring it back to life!!

I don't understand people who cremate their steaks, its ruins them! Takes all the flavour and juices out of it in my opinion. But i guess each to their own!

How do you like yours cooked?

I hate to break up the "rare club" but I like my steak medium well to well done. The best way to get around the dryness is to grill them. I agree that most resturants don't know how to cook a steak without drying them but I believe that's because they are under a time restriction to serve the customer. Just knocking the feet off of the cow doesn't do it for me, but give me a T-bone steak with some A-1 sauce off the grill anytime

There are 4 components to a young steak. First is a the decrease. decide on a decrease from what are called the muscle groups of help (Rib steak is right)fairly than the muscle groups of locomotion (around or Chuck) examine the grade. top pink meat is larger marbled than decision or decide on pink meat. 2d is to apply a marinade. Acids paintings properly to interrupt up proteins in a decrease of pink meat. in the previous I even have used pink Wine, Beer, Orange Juice, or maybe Coke to tenedrize pink meat. you additionally can purchase a commercial meat tenderizer containing Papayan, an enzyme that breaks down protein besides. third is your cooking technique. long sluggish moist warmth will make a steak disintegrate whether it won't have the flavour or consitancy of a steak. i might saute a steak in a pan then end it off in an oven. Salt and pepper the steak first. Get a pan stearing warm. then upload a million TBS oil. circulate oil around and wait till the oil is approximately waiting to smoke. saute the steak in the pan very immediately on one factor. placed the steak on a plate and get the pan searing warm returned and saute the different factor. end it up in the oven. For doneness examine how lots the beef resists you touch... uncommon is as business enterprise as your Cheek. Medium is as business enterprise as your nostril and properly achieved is as business enterprise as your brow. The forth factor is once you have cooked your steak is to allow it relax of five to 10 minutes beforehand reducing. this permits the juices to re-distribute and makes for a greater soft steak.

Definately rare! I agree with you 100%, can't stand a well done steak. Its dry, its tough, its yuk. Medium [pinkish red inside] I will still tolerate, just.
When I fry it I add some lemon juice and garlic with butter. No salt [it can make it tough] or any other spices, just slather it with Hot English mustard. Hmmm....
Had fillet steak done rare with lots of mustard last night in fact... :)

The same as you wonder woman, nice and red and juicy and bloody. Top it with some Roquefort butter (butter with Roquefort cheese mashed in) when it is hot of the grill and yuuuuum.
