My salad is basically a Waldorf salad, except I use thinly sliced fennel instead of celery. (The other ingredients are diced apples, dipped in salt water, and brown-sugar glazed walnuts.) I used mayonnaise as the dressing, and it kind of drowned out the fennel flavor. What kind of dressing can I use to help bring out the fennel? (I'd still prefer a creamy dressing, but am willing to consider anything.)

A fine piece of 'Scientific research' (lol) suggests that 'a light sprinkling of celery salt will bring out the flavour, without detracting from the subtlelty of the fennel unduly'. x

you can put fennel seed in the dressing.
you can put the fennel fronds in, just give them a quick chop (the 'leaves')
or you can grate some fennel, like on a box grater, and mix it in.
