I love them with mayo, yokes, very fine diced celery, S&P and diced cooked shrimp.

All of the above are good recipes - both the tart vinegary and the sweeter - however, to give a little different take and texture, add some cream cheese to the yolk mixture - then squeeze out of the cut off corner of a zip lock bag into the white for a smooth "curly cue" look - garnish with any colorful thing -I often use a small shrimp sprinkled with a splash of paprika .

This is one of the many ways I make deviled eggs.
Savory deviled eggs
12- hard-cooked eggs, peeled
1/2 c. light mayonnaise (or regular mayonnaise)
1 tbsp. honey mustard
1/4 tsp. black pepper
1/2 c. large pimiento-stuffed olives (about 8), chopped
parsley for garnish
1. Cut eggs in half lengthwise and spoon yolks into a bowl. Reserve whites. Mash yolks with a fork. Stir in mayonnaise, honey mustard and black pepper.
2. Reserve 1 tbsp. of the chopped olives. Fold remaining chopped olives into yolk mixture.
3. Fill whites with the yolk mixture. Sprinkle reserved chopped olives over the tops of the eggs. Refrigerate for at least one hour.
Variation: Prepare filling, omitting olives. Instead, stir in 4 strips cooked, crumbled bacon and 2 tablespoons of shredded cheddar cheese.

Mayo (always full-fat! I don't believe in skimping with my eggs!), mustard for color, vinegar for bite. I don't like sweet deviled eggs. I like 'em a little tart.

I use Saffola Mayonnaise, paprika, onion, garlic, dill weed, egg whites, brown spicy mustard (or if you like, Gray Poupon mustard) and sometimes chili or homegrown peppers.
People who know my eggs make sure to get to the table first!
