There are several drills that can be done to help resolve some of this if it is a problem for you. One is to have a partner shadow box with you as you stand still in a fighting posture. As the blows and kicks come at you you should be watching them and thinking of blocking or slipping them and moving in and countering so that you make your opponent pay each time he initiates an attack or closes the gap. His blows to the face especially should be intently watched and this will help some in training you not to blink or flinch. Another involves training in water and you splash the water at one another and avoid flinching or blinking excessively as the water is splashed towards your face and eyes. That one was demonstrated on television recently in the Muay Tai episode of The Ultimate Weapon.

Some fighters are born with this ability to not flinch or blink excessively when blows are coming at their face and that is what they sometimes refer to as "a fighter having good vision". This along with good footwork are very much underrated by many people but both are characteristics that can have a big impact on the outcome of a fight besides the more obvious ones like hand speed, punching power, or ability to take a punch.

Ask your instructor to teach you the eye exercises that improve your eye muscle control and reaction time. Whenever a kick or hand strike is moving in your direction, move towards it, deflect it with a block, then counter-strike. Learn to move out of the way. If you focus on redirecting the attack and striking at the same time, maybe you'll tend to blink less.

Don't be there to get hit and you won't have to worry about the blinking thing.

If you read Musashi "The book of Five Rings" It tells you narrow your eyes and slacken your face (as in no tension). It says to stabilize your stance and relax your shoulders. I highly recommend this book for anyone studying strategy.
