I was wondering if anyone had any good recipes for stuffed mushrooms using sausage or something like that.

Grandma Nancy's Stuffed Mushrooms
Recipe courtesy Rosemarie Pisarra

6 large button mushrooms
1 link hot Italian sausage (meat taken out of casing)
3/4 cup seasoned Italian bread crumbs
3/4 cup grated Pecorino Romano
1/4 cup grated Parmigiano Reggiano
1 tablespoon garlic powder
1/2 teaspoon freshly ground black pepper
1 tablespoon dried parsley
1/4 cup extra-virgin olive oil plus more for drizzling
1/4 cup shredded mozzerella

Preheat oven to 375 degrees F.

Wash and pat dry mushrooms. Take off stems and chop into small pieces. Place mushroom caps in baking dish. Place teaspoon of sausage meat in bottom of mushroom. Press meat down into mushroom.

In a small bowl combine mushroom pieces, bread crumbs, Pecorino Romano, Parmigiano Reggiano, garlic powder, pepper, and parsley. Add olive oil until mixture is moist. If too dry add more oil.

Fill each mushroom cap generously with stuffing mixture and place in baking pan. If any stuffing is leftover, divide evenly and top each mushroom. Drizzle olive oil over each one. Pour little water in bottom of pan. Cover with foil.

Bake for 30 minutes. Remove foil, sprinkle shredded mozzarella on each mushroom and bake uncovered for another 10 minutes.

Use white button mushrooms and buy enough of them for your guests. Wipe them clean and take off the stems, set aside the tops on a baking sheet. Chop the mushroom stems and saute in 2 TBSP of butter and the following ingredients:

1 small onion, minced 2 slices whole wheat bread
1 small carrot, minced 1- 1/2 cups chicken stock
1 stalk celery, minced 1 can crabmeat

after these ingredients have sauteed together about 5 minutes, transfer to a bowl and allow to cool.

Meanwhile, melt another TBSP butter in the same saute pan. Coat each nushroom top with butter and place again on the baking sheet.

Use a teaspoon to stuff the crab mixture into each of the musroom caps. Top each with a few shreds of sharp cheddar cheese.

Enjoy!

Bake at 325 for 15 minutes or until cheese melts and you can smell them.

I got a great simple, easy, and cheap recipe!!

Get enough mushrooms for you and who ever else is eating...

Preheat oven to 350

Clean the mushrooms, taking out the steam and putting aside.

In a medium saute pan melt about 6 TBPS of butter.

Chop up the mushroom steams and add to melted butter cook for about 3-5 minutes.

Add some parsley(1/2tsp dried) and oregano (1/2tsp dried). Dice up 3 cloves of garlic( use less if you dont like garlic). Cook an additional 3 minutes.

Add Italian bread crumbs to the pan (enough till all butter is absorbed) Don't worry if you add to much, just add more butter...you want to be about the consisity of stuffing...cook until stuffing is browned. Add 3TBSP of grated parmaean cheese.
Mix...

Let stuffing cool. Then stuff all the mushroom tops.

Bake in oven for 10-15 minutes until brown and crispy on top.

Take the mushrooms out and add more cheese to the top!

There are many ways and many different things to stuff mushrooms with. You can check out many different websites to find your choice of stuffing. Try, allrecipes or foodnetwork or epicurious also Yahoo has many different sites that you can join that will send you recipes directly to your email. One is budget101 I think I have several recipes one that uses crab, one that uses stuffing mix and one that is spicy. Just check out the different sites I am sure you find something you are looking for. Oh and if it is something you ate at a famous place like chilis try copy cat recipes on the web. Hope this helps,

There are so many different ways to stuff mushrooms... here is one that you might enjoy...

Cheese Stuffed Mushrooms
16 lg. Mushrooms, stems
½ c. low fat cottage cheese
chopped and set aside
1 ½ tsp. Prepared mustard
2 T. Green onion, chopped
½ tsp. Worcestershire sauce
2 tsp. Margarine
Put margarine into a hot skillet, melt and add mushroom stems, onion and saute`. Put into the cottage cheese and add mustard and Worcestershire sauce, mix and stuff the mushroom tops, put into oven at 375^ for 8 to 10 minutes.

I love this one because of the blue cheese. You can substitute an other cheese if desired.

Blue Cheese Mushrooms Recipe

Ingredients:
1 pound medium fresh mushrooms
1/4 cup sliced green onions
2 tablespoons butter
1 package (4 oz. size) crumbled blue cheese
1 package (3 oz. size) cream cheese, softened

Directions:
Remove stems from mushrooms, chop stems. Cook and stir stems and onions in butter until tender. Add bluecheese and cream cheese; mix well. Spoon evenly into mushroom caps. Place on rack of broiler pan. Broil 2 to 3minutes or until golden brown. Serve hot.

Purchase 8 nice large white mushrooms wipe them clean (do not get wet to wash just wipe with damp cloth) Remove stem. Chop stems, chop 1 shallot or enough onion to make 2 tbl. In saute pan in 2 tbl butter saute stems and shallot or onion for 3-5 minutes. To pan add 1 small can crab meat , remove from heat and add 3-5 tbl cream cheese, either brick style or whipped. You could use the garlic flavored or veggie flavored for variety. Mix together and make balls. push inside mushroom mounding on top. Put in baking pan or pie pan and drizzle with additional butter or mixture of butter and olive oil and sprinkle with parmesan cheese. Bake 20 minutes or until bubbling and mushroom is soft. Enjoy

Sausage Stuffed Mushrooms

PREP TIME 20 Min
COOK TIME 20 Min

Original recipe yield: 10 servings

INGREDIENTS

1 pound Original Recipe Sausage Roll
1 (10 ounce) package frozen chopped spinach, thawed and well drained
1/4 cup dry bread crumbs
1/4 cup grated Parmesan cheese
40 small white mushrooms, stems removed

DIRECTIONS
Preheat oven to 350 degrees F.
In large skillet over medium heat, crumble and cook sausage until browned. Remove from heat and stir in spinach, bread crumbs and cheese until well combined.
Place mushroom caps on a baking sheet and fill with sausage stuffing. Bake 15-20 minutes or until mushrooms are tender.

Savory Crab Stuffed Mushrooms

PREP TIME 25 Min
COOK TIME 20 Min

Original recipe yield: 24 mushrooms

INGREDIENTS
3 tablespoons butter, melted
24 fresh mushrooms
2 tablespoons butter
2 tablespoons minced green onions
1 teaspoon lemon juice
1 cup diced cooked crabmeat
1/2 cup soft bread crumbs
1 egg, beaten
1/2 teaspoon dried dill weed
3/4 cup shredded Monterey Jack cheese, divided
1/4 cup dry white wine

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Prepare a 9x13 inch baking dish with 3 tablespoons butter.
Remove stems from mushrooms. Set aside caps. Finely chop stems.

Melt 2 tablespoons butter in a medium saucepan over medium heat. Stir in the chopped stems and green onions and cook until soft, about 3 minutes. Remove saucepan from heat. Stir in lemon juice, crabmeat, soft bread crumbs, egg, dill weed and 1/4 cup Monterey Jack cheese. Thoroughly blend the mixture.

Place mushroom caps in the buttered pan, and stir until caps are coated with the butter. Arrange caps cavity side up, and stuff cavities generously with the green onion and crabmeat mixture. Top with remaining Monterey Jack cheese. Pour wine into the pan around the mushrooms.
Bake uncovered in the preheated oven 15 to 20 minutes, until cheese is melted and lightly browned. Serve warm.

I recently had the most beautiful stuffed mushrooms at a christening. My cousin gave me the recipe. She said she simply sliced camembert cheese (or use Brie if you prefer it) and placed in the musroom cup - then press pine nuts on top. Drizzle a tiny bit of olive oil over and grill.

They were so delicious.
