True story, since my great-great-grandparents came from Denmark via Ellis Island when it first opened in 1891. They brought a wooden trunk and nothing else. It contained winter clothing, dishes, silverware, a few ceramic items like a pitcher and a few plates, personal papers, and two blankets.
Mom still has a few of these things, plus the wooden trunk.

Have you ever seen "Titanic"? Steerage class was where all the (relatively) poor people were. So you can see that there would be little room for anything other than a suitcase. I imagine people would take clothes, mostly and a few treasured mementoes.
