This is a super easy way to fix an incredibly wonderful salmon dinner: mix up a sauce of mayonnaise and lemon juice. I squeeze in some garlic and a little salt and pepper. Most people just use the juice from the garlic but I either squeeze it through a garlic press or chop it on a chopping block and use the whole garlic clove as well as the juice because I love garlic and it is a natural anti-biotic and disease fighter. I mix all that together. Spread it over the salmon. Wrap it in foil or cover it very tightly and bake it at about 350 degrees just until it is tender. Most people over-cook fish, which makes it tough and yukky. Oh, I also slice onions very thin and put them on top of the salmon before sealing it up for baking. I make LOTS of the sauce because I bake some potatoes, carrots and green beans in the oven before baking the salmon and I love the sauce over the veggies, as well. Mmmmmm. You can prepare most fish like that. Guess what I'm preparing for dinner tonight? ! Yup! FISH. Sometimes I even prepare it that way in my crock pot.
And, of course, serve it with a glass of red wine, which studies show is better for you than the white wine - it's heavenly. Here are some really great web sites to check out:

Poached in French Onion Soup Mix
My dad was a chef before he retired.
He would mix a package of French onion soup mix with just enough water to dampened then spread all over the fish...usually a 2 to 5 lb fillet. He would then pour melted butter and lemon juice over the top and poach in the oven until done...normally about 30 minutes. He has also cooked in on the grill in a tin foil packet. Both methods work great.
It's a winner every time.

Baked Salmon

2 cloves garlic, minced
6 tablespoons light olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped
2 (6 ounce) salmon fillets


In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley.

Place salmon fillets in a medium glass baking dish, and cover with the marinade.

Marinate in the refrigerator about 1 hour, turning occasionally.

Preheat oven to 375 degrees F (190 degrees C).

Place fillets in aluminum foil, cover with marinade, and seal.

Place sealed salmon in the glass dish, and bake 35 to 45 minutes, until easily flaked with a fork.

I *LOVE* lemon and dill on salmon.

I like to take a nice piece, put it skin side down on a baking sheet, add a little seasoning salt.

Mix a stick of butter with a tablespoon of lemon juice, and a teaspoon of dill (fresh is best, but you can use dill weed).

Place little 'globs' of the butter mix evenly over the salmon, cover with foil and bake at 350* until done (depends on the size of salmon you start with).

Alaska Salmon Bake with Pecan Crunch Coating

PREP TIME 20 Min

Original recipe yield: 6 servings

INGREDIENTS
3 tablespoons Dijon mustard
3 tablespoons butter, melted
5 teaspoons honey
1/2 cup fresh bread crumbs
1/2 cup finely chopped pecans
3 teaspoons chopped fresh parsley
6 (4 ounce) fillets salmon
salt and pepper to taste
6 lemon wedges

DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.
Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.
Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.



Spicy-Sweet Glazed Salmon

READY IN 2 Hrs 20 Min

Original recipe yield: 6 servings

INGREDIENTS
1 1/2 pounds fresh salmon fillet with skin removed
1/4 cup red wine vinegar
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup water
1 tablespoon lemon juice
1/2 teaspoon red pepper flakes, or to taste
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons chopped fresh cilantro
1/3 cup brown sugar, packed
salt and ground black pepper to taste

DIRECTIONS
Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
Turn on broiler to low.
Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.

This may sound weird, but it is tried and true in our household!

Salmon fillets, French dressing to cover, french fried onions, topped with fresh grated parm. Bake for about 30 minutes.

It has won in our cooking contests with friends, and anyone who has had it has asked for the recipe!! Great with green beans!!!
