You can not force the insurance company to replace the part if a repair is appropriate. According to the policy - the insurance company has the right to repair/replace as they deem appropriate. If they agree to a used bumper and you want a new one - you are welcome to pay the difference out of pocket.
Take the car to the shop of your choice. Show the shop the car and the estimate. If the shop disagrees with the adjuster's estimate -the shop will call the adjuster and they will work it out. Most body shops are familier with the process. Shops have no problem calling adjusters if they disagree with the estimate.
Per your question the rear bumper cover had a dent in it. The bar and absorbers are behind the cover. These can often be difficult to see when the bumper cover is on the car. It is not uncommon for me to write an estimate and once the car gets to the shop - for the shop to take the bumper cover off and now I can see damage to the bar/absorbers. In a case like this - the shop calls me- I may have to go back out and inspect the car again andI write a supplement.
Long story short - give the estimate to the shop and let them handle it. A good shop will make sure that the car is repaired appropriately and in accordance with manufature specifications.

haha no. You dont just "decide" what you want.
In your contract you signed you said that they could repair a part if repairable and replace with used and aftermarket or new parts if non-repairable.
A 1.5 inch dent and scratches is EASILY repairable- why on earth should they replace it and raise all our insurance rates? Could you imagine if every single part that had any damage on it was replaced with a new OEM part? Our rates are already high! You MUST be one of those customers that drives an adjuster crazy. "oh my precious mercedes!" If you want it replaced.. be ready to pay the extra cost out of pocket because besides that, you have no say here.
Your insurance is NOT going to give you back your car until it looks like it did prior to the accident.. why not let the experts worry about this instead of giving them a hard time before you even see the results?

If your bumper is repaired you will still have a 'Mercedes' bumper. What would you do if you had a dent in the roof...demand it also be replaced? You always have the option of using new parts vs. repair but YOU will have to pay the difference in cost.

I'm not sure where you are located, but that sounds fishy to me. In California, the adjustor is not allowed to tell you you have to have it fixed, nor to force you to use anything but original parts if you want to do so. They always try to have it fixed or to get a used part or non-manufacturer replacement because it saves them money. In California you as a car owner can't be bullied that way.
Also, in most of the USA, the car that hit you from behind is almost ALWAYS the at-fault party. VERY rarely can you be hit from the rear and determined to be at fault.

You can argue if you want to, but it probably won't do much good. They (the insurance) will take the cheapest possible route. Of course you can pay the difference and have it replaced instead.
